Thick, soft vegan chocolate chip pancakes are made with just 5 ingredients, gluten free and naturally sweetened!
I love breakfast.
Okay wait. I love SWEET breakfast. For as much as I love almost all vegetables and spicy foods, the thought of having something savory for breakfast kinda disgusts me (drama queen alert). So, for this girl, it’s always something sweet in the morning. From straight up fruit, to waffles, to sweet oatmeal/cereal creations, to banana breads, whatever. If it’s sweet, vegan, and healthy, odds are I LOVE it for breakfast.
But. Pancakes will always be my real MVP when it comes to breakfast. Seriously though, think about it…soft, sweet cakes that you can stack up super high, and eat for breakfast?! OH AND THEY’RE VEGAN/HEALTHY.
It’s no secret that I love making pancakes, and I’ve made them with all types of base flours and other ingredients. I literally love all the pancake recipes I’ve ever posted! Currently I’m obsessed with these buckwheat banana pancakes. My classic, super versatile base pancake recipe will always hold a special place in my heart (stomach?), because they’re so thick and wonderful and my love for banana flour knows no bounds.

But today, we’re talking vegan chocolate chip pancakes. After a basic, go to pancake recipe, how could you want any other variation?! Growing up, my mom used to always make me and my two brothers chocolate chip pancakes on Sundays, so this breakfast will always be special to me. Now that I’ve come up with a vegan, healthy version, I get to relive those memories foreva! Thanks mama 🙂
This dreamy stack starts with banana flour! It’s basically the same as my base pancake recipe that I mentioned above, with some chocolate chips thrown in. I love starting with banana flour, because it’s slightly sweet when cooked, and gives a lovely dense, almost gooey texture, in the best way!
To the banana flour, I add some pumpkin puree, stevia for sweetness, and almond milk to bring the batter together. So easy! I always eat these on the weekends which means it’s following a crazy workout and I’ve slept in a bit more, so I’m getting dangerously close to the hanger zone, if you know what I mean. Who has time to spend on 10+ ingredient lists and complicated methods?!
Ain’t nobody got time.
While these do have pumpkin in them, they are NOT pumpkin spice pancakes. All the pumpkin does here is add moisture and softness, and give them a slightly orange tint.
That being said, because it is fall after all, you can most definitely make them into pumpkin spice chocolate chip pancakes with the simple addition of some pumpkin pie spice!
I’ll definitely be trying that this weekend. But okay, moving on!
The star of the show in our glorious stack of vegan chocolate chip pancakes is of course, the chocolate! I ALWAYS use these chips, and love them so, so much. They’re totally vegan, unsweetened, pure, rich chocolate, and the chips melt SO well.
They harden up amazingly too, so if you let it sit for a bit, you’ll get the “shell” effect from the chocolate around some of your pancakes if you throw some on top!
Because these pancakes have just 4 ingredients, and I don’t use chemical leveners, they’re more dense and almost gooey than light and cake-y. I loooove my pancakes like this. The banana flour is critical for that effect! If you want something a bit fluffier, you could probably use oat flour.
These vegan chocolate chip pancakes make the best sweet, fun, special breakfast, while being totally healthy and naturally sweetened. With pops of chocolate in every bite, they’re the sweetest way to start the day!
