So…how do you guys feel about Valentine’s Day? Considering I have heart shaped vegan chocolate covered strawberry pancakes for you, I’m hoping you’re a fan.
I love Valentine’s Day. Maybe it’s because I’m married to the most wonderful man on this earth, but Valentine’s Day just seems so fun and special. Plus, I LOVE the colors. The emphasis on flowers and chocolate doesn’t hurt, either.
If we’re being honest, Valentine’s Day is coming at the perfect time for me this year. I’ve been feeling a little off lately, in a way that’s hard to describe. Just feeling lost, but I know exactly where I want/am supposed to be. Sounds like it makes no sense, I know! Regardless, I’m trying to stay strong in my faith and be positive – I know things always work out, some way or another, and I’m blessed to have the best partner in life to be there for me through it all. Oh, and I’m blessed to have you guys and this blog! Seriously keeps me going and I LOVE every second of it.
So if you can sympathize with a low phase, just keep going! We’ll get through these weird times in life together.

This pretty stack of vegan chocolate covered strawberry pancakes would be the perfect special breakfast for your favorite person on Valentine’s Day. OR it could be the perfect breakfast for you on any random Thursday! Either way, these pancakes are easy to love.
First of all, I based these off of my favorite base pancake recipe. That recipe is seriously one I use every weekend, it’s so easy and always creates a stack of thick, fluffy pancakes.
I made a few little changes to make them super chocolatey. The base is still banana flour, and here we need some cocoa powder, of course. Stevia for some sweetness, pumpkin for moisture, and almond milk. Today’s recipe calls for a little bit more almond milk than the plain pancakes, because the cocoa powder tends to have a drying effect, so we need a little more moisture to bring the pancake batter together.
Once the pancake batter is ready, cook it on a medium-high heat griddle (or in a pan), for about 8 minutes on each side. Once the pancakes are cool, I use a heart cookie cutter to cut out the shapes.
Of course, no cutting necessary if you’re just looking for some scrumptious chocolate pancakes ASAP.
Once the pancakes are in cute little heart shapes, pile on the strawberries. I had a little too much fun seeing how high I could get mine before they all toppled over – feel free to scatter them on the plate or on the side like a normal person!
It’s not always my first instinct to combine fruit and chocolate – I love them both so much on their own! I’m always happy when I decide to – plus, it’s a known fact that strawberries and chocolate are a serious match made in heaven.
If you are celebrating Valentine’s Day with this special breakfast, we need some decadence. I add a thick, healthy chocolate sauce all over the top to get the whole chocolate covered strawberry vibe. The sauce is a simple mix of stevia, cocoa powder, and almond milk. I just blend it for about 5 seconds until smooth, then drizzle over the pancakes.
I’m a total condiment/sauce addict, I always need something to dip or pour over any of my food. That sounded really weird. But anyway, the sauce really takes these over the top! So rich, and you can never have too much chocolate.
This recipe makes 2 servings, because if you’re making vegan chocolate covered strawberry pancakes for your loved one, you definitely deserve some, too. Because I said so, and I love ya.
