Do you guys know what buckeyes are?! Other than my alma mater’s mascot (any other Ohio State fans/alumni reading?! I love ya!), a buckeye is actually a type of nut. It comes from a buckeye tree, which is the official state tree of Ohio. Strange and kinda random, right? Agreed. But hey, if you know what a buckeye is you probably know what the dessert version of a buckeye is – a super sweet peanut butter ball, partially covered in rich chocolate.

AKA pure heaven.

If you’ve had a buckeye before, or Reese’s cup, or anything chocolate + peanut butter (if not, WHY?!), you know it’s the best flavor combination of all time. EVER. No question.

So for these vegan chocolate protein waffle sticks, I made the waffle super chocolatey AND I made an almond butter sauce for dipping. Because let’s be honest, almond butter is just peanut butter’s prettier, tastier, big sister. 🙂 but if you like peanut butter better of course it still works here!!

You’ll start with the protein waffle. It’s a super easy variation on my plain 2-ingredient waffles – just some oat flour, cocoa powder, almond milk, and protein.

Sunwarrior is my protein of choice, but any plant-based protein should work! You may just need to adjust the almond milk amount depending on how absorbent it is.

Pop that waffle into the iron until it’s nice and crisp on the outside and fluffy on the inside! Also, your house will smell like a chocolate baking factory of deliciousness at this point. You won’t be mad. Chop the waffle into fun little sticks! I just used the grid lines on the waffle as my guide.

Last but not least is the crowning glory – the almond butter dipping sauce! Plain almond or peanut butter would be just fine to drizzle over. But if you’re feeling fancy, blend some of your nut butter with a couple dates and some hot water until super smooth. Drizzle it over top or dunk your little chocolate protein waffle sticks right in!

Fun breakfast is the best breakfast.

Vegan Chocolate Protein Waffle Sticks

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 2 waffles

Ingredients

  • Waffle sticks:
  • 2 c whole grain rolled oats, ground into flour
  • 2 tbsp unsweetened cocoa powder
  • 1/4 c chocolate plant-based protein (I use Sunwarrior)
  • 2 c unsweetened almond milk
  • Peanut butter sauce:
  • 2 tbsp natural, unsweetened peanut butter
  • 4 medjool dates
  • 1/4 c hot water

Instructions

  1. Combine the waffle ingredients and pour half into a waffle iron until cooked through (mine take about 8-10 minutes, but depends on the iron!) - repeat with the other half of the batter, so you end up with two waffles.
  2. Cut each waffle into sticks of your preferred size.
  3. To make the peanut butter sauce, combine the peanut butter, dates, and water in a high-power food processor or blender and blend until totally smooth - you may need a little more water to get it to your desired consistency for dipping.
