Sooo apparently I couldn’t make waffles without suddenly feeling guilty for betraying my pancakes.
Here we are on a Monday, staring at vegan double chocolate pancakes. I’m not mad about it.
I love pancakes. How could you have a bad day when it starts with soft, sweet, pillowy pancakes?! Ya just can’t.
Since adding chocolate to life itself makes things infinitely better, adding chocolate to the pancake batter AND chocolate chips took my love for pancakes to a whole other level.
The pancake batter is a simple mix of oat flour, cocoa powder, stevia, pumpkin puree, and almond milk. I love oats as the base in my pancakes because they give a great flavor and thick, slightly chewy, but still soft texture. Plus, all the amazing health benefits of oats! Best food ever. Well, one of them. Don’t make me choose! The cocoa powder is there because these are chocolate pancakes, so duh, and stevia adds sweetness. Pumpkin puree for a softer texture, and some almond milk to bring the batter together. Oh, and chocolate chips! A necessity.
Easy peasy, pancakes for meezy. Sorry.
To cook these vegan double chocolate pancakes, I measured out about 1/4 cup of the batter for each pancake, and they took about 8-10 minutes on each side on my griddle. Some get hotter than others though, so just watch closely! The edges will start to dry out when they’re ready to flip.
Once your pancakes are all ready, it’s time for toppings! Today I kept it simple because we’re focused on chocolate, so feel free to throw some more chips on top. BUT I have to say these would be incredible with some almond butter and bananas on top.

Seriously though, what are your favorite pancake toppings?! I know syrup is the classic, but I hardly ever used that growing up. Now I always love making some kind of chocolate sauce with cocoa powder stevia and almond milk, or just nut butter because it’s vegan crack. But I’d love to hear your faves!
