Real talk, friends – this week has been a tough one for me. Lately I’ve been really stressed, feeling not like myself, questioning whether I’m doing the right thing in my everyday life, if I’m truly enjoying each day to the fullest.

We all need some ebbs and flows in life, so we can really savor and appreciate the good times. I’m also a huge believer in learning and growing from trials. It all happens for a reason!

I’m really trying to stay positive and trust the process, that whatever I’m meant to be doing will eventually happen, and that no matter what sometimes we’ll struggle. What matters most is how we respond. I’m blessed to have an incredibly supportive husband, and SO lucky to have you guys baking along with me.

This blog has become such a strong passion of mine, and when I’m really stressed or down, baking/blogging seriously keeps me sane. I love every second that I put into Beaming Banana. So thanks for stopping by, and have I got a serious treat for you today to make it worth your while!

Joe is an apple dessert addict. I’m a chocolate girl all the way – I’m an absolute fruit bat, but I love my fruit as a snack or stand-alone as a dessert. I’ll always pick a piece of my healthy vegan cakes, brownies, or a this heaven over something involving fruit.

My husband, on the other hand, cannot resist. Especially when it comes to apples.

Now that fall is officially here, I’ve been cranking out apple recipes like crazy! Joe has had no complaints about this, naturally. And honestly it’s SO fun for me to bake things that he freaks out over. He works so hard and is the absolute perfect husband for me 24/7, so providing some healthy, super decadent treats that he loves is the least I can do!

Joe said this is the best thing I’ve ever baked. Those are high praises from Beaming Banana’s number one taste tester! He’s literally tasted everything on the blog, and apparently this vegan apple tart reigns supreme – for now. 🙂

This vegan apple tart even had me salivating, and that’s saying a lot for a fruit dessert! It’s got a few components, and a few more steps than my typical super quick/easy recipes. Don’t be afraid!

Although there are more steps, they’re all very easy steps. Plus, the payoff is a super impressive, healthy, slightly more fancy, SUPER delicious dessert! So worth it, trust me.

First up, the crust! It’s a super simple, mix and press crust. All you need is almond flour, whole grain oats which you’ll grind into flour, and some almond milk. So this can be gluten free, if necessary, if you’ve got certified GF oats!

I used a tart pan which gave me the cute edges. You’ll have to press quite a bit to get it all evenly spread and up the sides – patience and perseverance, friends! You can do it, you’re a healthy dessert baking boss. Once you’ve got it all spread in the pan, bake the crust for 10 minutes.

While the crust is in the oven, sauté your apples! I sliced up 2 honey crisp apples. Honey crisp are by far my favorite, but really you could use any firm, sweet apple you like. I’m NOT a granny smith person – way too sour for me! But really, it’s totally up to you what apple variety you choose. Sauté the apples in some almond milk and cinnamon, for extra fall goodness. Mine took about 10 minutes to soften up and brown slightly.

The last component is the rich, gooey date filling. It’s a mix of date paste and unsweetened applesauce, and what else? More cinnamon. Cinnamon and apples are married forever and ever, remember? And for good reason – they are SO good together. This filling tastes so sweet and decadent, with absolutely no horribly unhealthy ingredients involved. It’s seriously magical!

Take the crust out of the oven, pour in the date caramel filling, and place your apple slices in a cute pattern on top. Place the whole tart back into the oven for another 10 minutes. See, not too hard! We’re on our way to apple heaven here, friends.

This vegan apple tart is FULL of apple flavor, perfectly spiced, with the perfect complements of gooey filling and a hearty, thick crust. Perfect and impressive for any fun fall gathering! People will NOT know this is vegan and great for you. For now, I’ll stick with making them for my sweet husband. This one’s totally for you, Joseph! I love ya to pieces. 🙂

Vegan Apple Tart

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

Yield: 1 tart

Ingredients

  • Crust:
  • 2 c almond flour
  • 2 c oat flour (make sure they're gluten free if necessary)
  • 1 c almond milk
  • Filling:
  • 1/2 c date paste (I used 8 dates blended with 1/2 c hot water)
  • 1/2 c unsweetened applesauce
  • 2 apples, sliced
  • 1/4 c almond milk
  • Cinnamon

Instructions

  1. Preheat the oven to 350 degrees.
  2. Combine the crust ingredients and bake for 10 minutes.
  3. Sauté the apples in almond milk and cinnamon until slightly softened - mine took about 10 minutes on medium heat.
  4. Blend dates and water to make paste, mix with applesauce and spread into the crust.
  5. Top with apple slices, sprinkle with spices if desired, put back in the oven to bake another 10 minutes.
  6. Let the tart cool in it's pan for at least 15 minutes before popping out to serve.
