KIDDING. I love you. But for real, I will NOT apologize for this, because more chocolate equals more happy, always. But because I’m aware that people who enjoy fruit over chocolate in their sweets do in fact exist (one of them being my husband!), this week we’re all getting a little fruity. I’m not going to lie, I love fall/winter baking best, and chocolate is my life, but there’s something about summer fruits that I will never get tired of when it comes to sweets.
I just love fresh cherries, especially for snacking. Seriously, I can down a whole bag, with impressive (embarrassing?) speed. As lovely as cherries are this time of year, I feel like they totally get the shaft when it comes to summery fruit choices. Part of this is totally justified, because they usually cost more than like, what I’d be willing to pay for like, an entire week’s grocery haul. But still! Cherries are typically absent from summer dessert tables.
We’re changing that today with a yummy, easy, cherry-focused crumble! Because cherries are already divine on their own, so adding a sweet, chewy, crumble topping can only make them infinitely more delicious.
While pondering the injustice of leaving the poor cherries out of the fun, I decided to start getting the cherries ready. Removing stems, slicing in half, digging out the pits, all that. It took about 5 minutes and 7 cherries to understand why people may gravitate toward “easier” fruits like strawberries or blueberries, that don’t require a ton of (any) prep. But the fact that I stood there and chopped/pitted 3 cups of cherries just shows how worth it they are! Honestly, it’s kind of a therapeutic, relaxing process to get them ready. Plus, you just benefit from the incredible cherry flava! That auto-corrected to “lava” about four times, so I hope you read it like I said it in my head.
My point is, for the extra few minutes the cherries require, they so make up for with their flavor. Once you’ve removed the stems and the pits, you’ll need about 3 cups to fill the bottom of your pie pan sufficiently. I got this amount with about a pound of cherries. Aren’t they so pretty?! Too pretty to eat! Ha, almost.
Once you’ve prepped the cherries, you’re definitely done with the hard work. The crumble topping is a super easy mixture of whole oats, oats ground into flour, and date paste. I also include a tiny bit of almond extract, since it complements the flavors of the cherries so well. But that’s totally optional and up to you! It’s just as dreamy without.
This vegan cherry crumble bakes for a quick 30 minutes, and it’s ready to be easily transported to any summer parties or get togethers! Or straight to a plate for your cute little self at home. Seriously though, this vegan cherry crumble couldn’t be any more simple to make – 3 healthy ingredients! – but the flavor is awesome. I love highlighting the incredibly sweet, beautiful cherries this time of year, and the crumble topping is just a delicious addition.
Go crazy with the toppings, here – coconut milk or banana ice cream or whipped coconut cream would be divine. So many amazing textures and flavors, here! I love crumbles for how rustic they are, and the simplicity. So easy to throw together, but so sweet and satisfying.
