Happy Thursday! How’s your week going?! Good or bad, we’re celebrating that tomorrow is Friday with a freaking giant vegan chocolate fruit pizza.
I knew you’d be in.
Unless you’ve lived under a rock and have never been on Pinterest, I’m sure you’re familiar with the whole fruit pizza concept. Typically it’s a sweet, cookie like base with something like cream cheese or vanilla frosting, and lots of fresh fruit in a pretty pattern. So fun, right?! As a total fruit bat myself, I couldn’t be more on board with this cute, sweet concept.
Today, we’re health-ifying the fruit pizza in the most delicious way! So of course, chocolate is making an appearance.
Before we talk specifics, I have to let you guys know about a new brand I am absolutely in love with. Like, head over heels, obsessed with their products, semi mad I didn’t find them much sooner.
Have you heard of Pascha Chocolate before?! Pascha is a company producing stellar quality chocolate products (shop their online store here!) – think chips, bars, stuff like that. All wonderful for baking, and eating straight up, of course.
The best part of Pascha, though? Everything, and I mean everything that they make is allergen free. 100% vegan, gluten free, dairy free, egg free, whatever free you need. Naturally, I saw the sugar free products and went insane. Baking chips that are 100% pure, rich cacao mass?! Hello, take my money.
Guys, stuff of this good quality is so hard to find! Healthy bakers, rejoice. Then buy some and make vegan chocolate fruit pizza.
Seriously though, I am so happy about finding a company so focused on an awesome concept of providing high quality, delicious chocolate products to anybody that wants them, regardless of dietary restrictions.
When Pascha offered to send me a new product they’ve created, I was literally watching my mail like a hawk to get my hands on it and start baking!
Today’s vegan chocolate fruit pizza really isn’t even possible without the Pascha chocolate fruit spread. The best way to describe it is like a thick, chocolatey, fruity, molasses. It doesn’t TASTE like molasses, but the texture is soooo thick and dreamy!
The chocolate spread gets all the sweetness totally naturally, which you guys know I’m all about. It’s literally just made with fruit juice and cocoa! As far as flavor, it’s pretty incredible. Picture super rich and pure chocolate flavor, with a slightly fruity accent. It lends itself perfectly to this fruit-focused vegan chocolate fruit pizza!
Whether you make this specific recipe or not, the Pascha chocolate spread is really versatile. After making this I seriously thought of countless other great applications! Think on top of oatmeal, slathered on a piece of warm banana bread, swirled through nice cream, as frosting/filling for cupcakes or muffins, or even just as a dip for fruit. YUM.
We’re using the spread as the “sauce” component for our dessert pizza. Don’t take a spoonful while you’re putting it together, or you’ll eat so much you won’t have enough to cover your pizza! I may speak from experience.
Let’s get to the recipe, because I can’t talk about the chocolate spread anymore without craving another giant slice of this vegan chocolate fruit pizza! Or a spoon in a jar of this perfection.
The crust is a super simple mix of three ingredients – whole grain oats, date paste for sticky sweetness, and vanilla for a little extra flavor. It definitely takes some muscle and a lot of patience to press the crust across the entire pizza pan – you can do it! Just use the bottom of a glass or measuring cup, or your fingers, and press press press until it’s evenly spread across the pan. Bake for just 10 minutes (the only baking component, today!), and it’ll slide nicely right off the nonstick pan when it’s done.
Next, our pizza needs some sauce! Here’s where Pascha’s chocolate spread comes in. I used about a cup, and it’s the perfect amount. Make sure the spread is at room temperature so that you can work with it easily – I just use an offset spatula, but a knife or spoon works fine.
An important thing to note – as you can see in my photos, the spread is a little melty and deliciously oozy. This is simply due to my crust being a teeny bit warm when I added the spread. I’ll be the first to say, it is so messy but SO delicious to eat this way, because the spread soaks into the sweet crust and makes it even more amazing. If you want it to hold up and be a little more firm, simply make sure your crust is TOTALLY, 100% cool when you add the spread, and you can even re-chill the crust with the spread on it before you top with fruit. Totally up to you!
The fun part of this type of dessert is you can really personalize it based on your favorite flavors. The fruit is completely up to you! For my vegan chocolate fruit pizza I really thought of color, so I went with a variety, like strawberries, pineapple, kiwis, blackberries, raspberries, and even a prickly pear!
No, I had never had one before, and yes, I had tiny splinters all day. Such pretty color, not worth the tiny splinters. Just throwing that out there, get those at your own risk!!
Once you’ve arranged your fruit in the pattern of your choosing, feel free to re-chill it, like I mentioned before with the sauce, to let everything kind of set up. This step is optional, though! If it’s for you and your fam on a fun day at home, feel free to devour right away.
Use a long, sharp knife or an actual pizza cutter to slice! The crust is really thin, but it can be difficult to get straight slices with all that fruit. Getting a little messy is part of the fun of baking, right?!
Seriously though, how perfect is this for springtime? This vegan chocolate fruit pizza is SO fun to put together, and of course the flavor is perfect! The combination of the rich, sweet Pascha chocolate spread with all the fresh, tart fruit is seriously to die for.
