This vegan peach raspberry crumble is begging to be on your table for any fun, spring-y gathering. Mother’s Day, Easter, or a random Sunday brunch are all perfect occasions!
I’m super happy with this recipe, but par for the course around here, it didn’t come out so perfect on the first try. Originally instead of using date paste in the crumble topping, I just used chopped up dates with the oats. Not sure what I was thinking, because it was just loose oats on top with some chopped dates throughout…um, hello, Sara. What the actual heck. Gross.
Anyway, I rolled with it and into the oven it went. After baking for a half hour the oats are still pale as ever, so I figure I’ll broil it for just a few minutes to get them nice and golden.
Two minutes later my oven is smoking and the oats are BURNT to a freaking crisp. Literally incinerated. Rest in peace, vegan peach raspberry crumble. So, I picked off the burnt bits and Joe still ate the entire thing. But obviously I was not satisfied.
The next time around I had the common sense to use date paste in the crumble topping, which is almost always the answer to any of my problems, and it came out soooo beautifully. Sweet, chewy while still a little crunchy, the perfect crown to the jewels of fruit underneath.
Anyway, recipe failures aside, the good news is that when you make this vegan peach raspberry crumble it’ll come out perfect on the first try!
The breakdown here is – fruit on the bottom, specifically raspberries and peaches. I LOVE this combination of fruit! Joe commented on that specifically, too, saying he’d never had it but that it was awesome. There’s something magical about the tart raspberries and super sweet peaches, and their differing textures, that makes it a wonderful pairing.
Then of course, the real star of the show – the crumble topping.
The crumble topping is a simple mix of a little bit of oat flour to hold things together, whole oats for texture and chew, date paste for sweet stickiness, and some vanilla for extra flavor. Super easy! It’s almost a cookie-like topping, so sweet and perfect on top of those tart raspberries.
I love crumbles for their simplicity. Literally just toss in some chopped peaches, whole raspberries, make the crumble, and spread it over the top. Bake it for 30 minutes, and it’ll be nice and golden and beautiful! Easy peasy, and so pretty.
