I feel like as an adult, I now love and appreciate cereal even more than I was a kid. Which is crazy, cause I was legit cuckoo for cocoa puffs. And cookie crisp. And anything else that involved me inhaling chocolate at breakfast.

The more that I think about it, I’m kinda coming to the conclusion that all ages love cereal, simply for the fact that it brings back that nostalgia of childhood, waking up on a Saturday morning, the whole day in front of you, and immediately downing a bowl of pure sugar.

So, this vegan 3 ingredient berry cereal is here to rectify that sugar crash! This cereal brings back all those warm, fuzzy, childhood cereal memories, AND it’s totally healthy and plant-based. It’s made with just 3 simple ingredients, and it’ll actually fill you up.

It’s the fun + fruity cousin to my favorite 3 ingredient chocolate cereal, and you need it for your next weekend breakfast!

  • Rolled oats: you’ll blend the oats to flour consistency, which helps hold the cereal balls together.
  • Medjool dates: blended with water into a paste, dates provide natural, fruit sweetness and the sticky texture to help the cereal come together.
  • Berries: berries give the cereal its fruity, sweet flavor.

Tips for making vegan 3 ingredient berry cereal

  • Measure the rolled oats before blending into flour. I always list the amount of oats used BEFORE they’re blended for flour. So in this case, you’ll measure out 3 cups of whole, rolled oats, then put those 3 cups into your blender to make flour.
  • Put your patient pants on. Rolling out the dough into tiny spheres can take a few minutes. Listen to a podcast or some music while you work to help pass the time!
  • Let the cereal sit out to get crunchy. After baking, the cereal needs to sit out on the counter for a couple hours. This is when it gets that crunchy texture! Because oats are the main component of the cereal, it will soften up a bit when stored in a tupperware container, so you may need to let it sit out again if you want it REALLY crunchy.

Vegan 3 Ingredient Berry Cereal

Prep Time 30 minutes
Cook Time 30 minutes
Total Time 1 hour

Ingredients
  

  • 3 cups rolled oats, blended into flour
  • 1 cup date paste – 15 medjool dates blended with 1 cup hot water
  • 1 1/2 cups fresh berries, blended – I used 1/2 cup raspberries, 1/2 cup blackberries, and 1/2 cup strawberries

Instructions
 

  • Preheat the oven to 350 degrees.
  • Split the oat flour evenly between 3 bowls.
  • Measure out 1/3 cup of paste into each of the 3 bowls.
  • Puree 1/2 cup of berries, and put into one bowl. Repeat with the remaining berries and add to the remaining bowls of batter.
  • Stir to combine each bowl of batter until thoroughly mixed.
  • Grab about 3 teaspoons of batter, roll into a ball, and place on a lined baking sheet. Repeat until all the batter is on the baking sheet.
  • Bake the cereal for 30 minutes.
  • Allow the cereal to cool and sit out for about 2 hours – this is when it gets crunchy.

  1. Omg that is a hilarious story!!! There are definitely worse problems to have, but so funny how people assume without thinking. I had someone ask me when I get my license once and I was like um I’m 20 haha! But cereal has no age limits regardless of how cute and berry bite-sized it may be. I love the color of that blackberry dough, wouldn’t mind sneaking a few pre-baking either 🙂 I should bake up a batch right now, I bet they would be the perfect travel snack!

    1. Haha oh my goodness, so I’m not alone in this age confusion! Sometimes awkward, but almost always makes for a good laugh at least 🙂 Girl YES you are so right about pre-baking, it’s pretty irresistible and totally okay if it doesn’t all make it to the oven. I didn’t even think about that though, perfect for a road trip!!

    I wonder if the crunch would happen better if freeze dried berries were subbed in for fresh. They could be made into a proper powder closer to the cocoa…

    1. Ya that might work! I find the date paste is what makes them softer usually, but you could definitely try that! Let me know how it goes if you do 🙂
