Happy Monday! How’s life? Things have been moving along as normal around here. Staying busy with school, blog stuff, and my THL internship. The internship is going so great so far. Even when I get home totally exhausted from a day at school, I LOVE working on it. Guess that’s how ya know you’ve found your passion, right?!
Hope all has been well with you guys – can you believe we’re in the last full week of October?! And Halloween is already next week. Crazy! But I’m not mad, because that means we’re inching closer and closer to Christmas time…

But before I get ahead of myself, let’s talk vegan caramel crunch bars! A fun, sweet, crunchy snack for you to enjoy while you pass out candy to your trick or treaters, perhaps? There is SO much common candy that’s actually vegan – definitely not healthy, but since most kids couldn’t care less about that, I’ll be passing out a variety of cruelty free sweets on trick or treat night! Since it’s our first year in our new home I’m excited to see how many kids will be out in our neighborhood.
Have you guys had whole buckwheat groats? I looked for them awhile back but couldn’t find them at any of the big grocery stores we go to around here, so I settled for buckwheat cereal, which is just the groats ground down a bit more, but not all the way to flour. I loved making that cereal overnight style, but then I finally ordered some whole groats online and oh my goodness. Game changer. I thought I loved the more ground cereal version, but after eating the groats, I don’t think I’l be able to go back! In their whole form the buckwheat is so crunchy and the mild flavor goes well with almost anything. I’m obsessed.
Buckwheat groats are pretty unique. When it comes to health benefits, they’re great! Despite the misleading name, they’re completely gluten free. They’re actually the hulled seed of a buckwheat plant, and they’re full of plant protein, fiber, vitamins and minerals. The fiber makes them super satiating, and I’ve been having them for breakfast during the week and they totally fill me up and keep me going until lunch.
I’ve seen them used in both sweet and savory applications, and they’re really versatile in that way! They’re SUPER crunchy, which is my favorite thing about them. I love eating them straight up with almond milk like cereal or soaked overnight, but I wanted to make a recipe that really highlighted the amazing texture, which is why these cute little vegan caramel crunch bars were born.
Two ingredients – yes, just two! – is all you need. The buckwheat groats, and some date paste. Easy peasy, throw it in to freezy. HA. Anyway.
The dates give that rich, caramel-like sweetness, and the groats provide the crunch, obviously. I probably didn’t need to explain that, but here I am. Let’s move on.
After freezing for at least 8 hours or overnight, the bars will hold together pretty well, but they aren’t rock solid like a granola bar or something, so don’t go in expecting that! After all, dates are the only thing holding these bars together, so it makes sense that they’re a bit loose. If you’re taking one on the go, wrap it in foil or throw it in a tupperware for any little pieces that fall 🙂 worth it in my opinion for the ease and simplicity of this recipe!
We also love breaking them up over smoothie bowls. YUM.
