Vegan Caramel Popcorn

Vegan caramel popcorn is the perfect balance of sweet and salty all in one easy treat! This healthy sweet snack is gluten free and naturally sweetened.


Happy Monday! How was your weekend?! I’m totally in the Christmas spirit. Over the weekend I baked up a Christmas storm with Christmas music blasting, and fought the crowds to get some shopping done. I didn’t have much luck, though – my dad is so hard to shop for! Plus I haven’t even started shopping for the husband, so looks like I’ll be making my way out again next weekend, which isn’t a problem for me. I love going out and seeing all the decorations, lights, and Christmas hustle and bustle. I’m not a huge fan of crowds, but it’s nice to get out and be busy then come home and cozy up on the couch for a Christmas movie.

I’ve got the perfect crunchy, salty sweet treat for those Christmas movie marathons (The Grinch is forever my favorite!), or even to gift to friends or neighbors. This vegan caramel popcorn is super easy, but the final product is addictively delicious.


Vegan caramel popcorn starts with just two required ingredients – air popped popcorn, and dates. We got an air popper like 4 years ago, and it’s still going strong! Trust me, it’s well worth the tiny investment for how much popcorn you’ll get out of it. The biggest perk, of course, is fresh, crunchy popcorn with no oil required. So many flavor variations, the options are endless! Today, we’re going with caramel.

Date caramel, also known as liquid gold, is simply blend medjool dates with some hot water. For this popcorn we’ll use more water than when we make date paste (like most of my recipes), since we want a thinner, pourable caramel. This is also where you could customize with any extra flavors – I love the addition of cinnamon during the Christmas season.


Once the popcorn is cool and your date caramel is ready, you’ll carefully pour it over the popcorn in a large bowl and stir gently, so that you don’t pulverize your little kernels. Here’s another part of the recipe that’s up to your preference – if you like a LOT of caramel, feel free to totally soak the popcorn, but it will be softer. If you really want the popcorn to retain some crunch, use less caramel and bake it a bit longer (added perk, you’ll have caramel left over to eat with a spoon). Joe likes his crunchy, I prefer soft, almost soggy, but super sweet! So go with what you prefer.

Vegan Caramel Popcorn

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 1 hour

Yield: 2 servings


  • 6 c air popped popcorn
  • 1/2 c date caramel (I used 8 medjool dates blended with 1 c hot water - feel free to add more water if it doesn't seem runny enough to pour over the popcorn!)
  • Cinnamon, to taste


  1. Using an air popper, pop the popcorn and allow it to cool in a large bowl.
  2. Make the date caramel, and pour over the cooled popcorn.
  3. Stir gently until the popcorn is coated to your desire, adding more/less caramel - more caramel will make it less crunchy, less caramel will give more crunch after it's baked!
  4. Bake the caramel corn on a sheet pan at 200 degrees for about 30 minutes. I broiled mine for another 5-10 minutes for some extra crunch at the end!
