So apparently this is unofficially granola bar week! After these chewy, chocolatey delights I just couldn’t stop. Also, COOKIE DOUGH.

Serious question: is there actually anybody in this world that doesn’t like cookie dough? Okay cool. Glad we’re on the same page. Cookie dough is officially loved by all in the land.

If only everybody could just get along and have like, a big cookie dough party. I’d bring this, this, and DEFINITELY these. You guys are all coming too, of course.

Vegan Cookie Dough Granola Bars

Today we have more cookie dough goodness, in the form of these vegan cookie dough granola bars. A fun flavor variation that’s super similar in terms of ingredients to the chocolate version I posted Monday! Because, as we’ve already established, we all love cookie dough.

Plus, when it’s vegan, healthy, gluten free, and totally naturally sweetened?!

Vegan Cookie Dough Granola Bars

These fabulous bars are made with a base of whole oats for super chewy texture, and some oats that have been ground into flour to hold everything together. Date paste gives some moisture and the perfect amount of sweetness, and I have a sneaking suspicion they also help with the cookie dough flavor – so caramely and sweet!

However, the main cookie dough component is for sure the cashew butter. Cashews are such a miracle. Don’t ask me how it mimicks the cookie dough flavor, because I don’t think I could describe it. But it’s like the creamiest of creamy, and really smooth and rich. It’s much more mild in flavor than most other nut butters. I love baking with it! Or no baking, in this case. A little bit of vanilla extract also helps copy the familiar cookie dough flavor, and that’s literally it!

You could definitely leave it plain and it’s so perfectly sweet and chewy. But like…why not add some chocolate? Or raisins? Cookies are great by themselves, but they’re infinitely better with mix-ins, no?! I know raisins have like their own personal hate club, but my husband loves them! I’m chocolate all the way, but oatmeal raisin cookies are a classic. You can’t go wrong either way!

Vegan Cookie Dough Granola Bars

Vegan Cookie Dough Granola Bars

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: 4 granola bars

Ingredients

  • 1 1/2 c whole grain rolled oats
  • 1/4 c whole grain rolled oats, ground into flour
  • 1/2 c date paste (I use 8 medjool dates blended with 1/2 c hot water)
  • 1/4 c natural unsweetened cashew butter
  • 1 tbsp vanilla extract
  • Optional: chocolate chunks or raisins

Instructions

  1. In a large bowl, combine the oats and oat flour.
  2. Add the date paste, cashew butter and vanilla and stir until everything is totally combined.
  3. Add your desired mix-ins and stir to combine (chocolate, raisins, nuts, etc.).
  4. Use a 1/3 c measure to scoop out the oat mixture and shape into bars.
