Happy Monday, friends! If you’re not a Monday person (and who is, really?!), I’ve got just the cure for you today. Vegan cookie dough protein bites are cute, poppable, no bake, AND healthy. Oh oh, and packed with protein! My very favorite Sunwarrior protein, specifically.
First of all, you guys know I love Sunwarrior. I’ve been using it for years, both in simple shakes and mixed with my oatmeal, and in recipes for my blog. Most recently, you guys have given me great feedback on this bowl of purple perfection, which uses the chocolate flavor.
I love Sunwarrior because it’s raw, vegan, naturally sweet, and has great texture and flavor. Some proteins are chalky or artificial tasting – but once I tried Sunwarrior, I was hooked and haven’t used a different brand since. I promise you’ll love it too! They have a lot of great flavor options, too, if you’re looking to mix it up. This is NOT sponsored post, I just have loved Sunwarrior for a long time and know people often have a difficult time finding protein powders that they like. My typical choice is their chocolate flavor, but for these vegan cookie dough protein bites, I went with vanilla. When thinking of the typical cookie dough flavor profile, I thought their slightly sweet, vanilla would be just perfect.
I was right!! And now we get to eat balls of cookie dough. Told you this Monday was going to be great.
Because these little bites are no bake, they couldn’t be easier to throw together for healthy snacks/breakfasts that are ready to go for the coming week. It’s a simple mix of whole grain oats, ground into flour, date paste for sweetness and a sticky binder to hold things together, vanilla protein for the cookie dough-ish flavor, and some almond milk.
I add a little bit of almond extract, because to me it makes them taste even more cookie dough-y! Just be aware when adding it, though, because it’s really strong. Literally a drop packs a LOT of flavor, so be careful! Too far and it’ll get way too overpowering. But just a few drops will add even more depth of flavor – I love it.
Last is any of your favorite cookie dough related add ins. Here I went with dairy free chocolate chunks, but I’m thinking raisins, cacao nibs, or even coconut would be awesome. Totally up to you!
These vegan cookie dough protein bites are definitely going to become a regular in our snack rotation, for good reason. They’re soft, sweet, and taste like cookie dough, for goodness sake!
