Happy Thursday, guys! I’m going to start incorporating new types of posts on the blog the first week of each month, Friday specifically. Fitness is such a big part of my life I just can’t leave it out! So keep your eyes peeled for something new, coming Friday! Be EXCITED cause fitness is EXCITING!

I still can’t believe it’s already August. This will be my last weekend before school stuff starts up again – teachers have a conference in Cincinnati this Sunday-Wednesday. The kids don’t start until the end of August, so up to that we’ll just have teacher work days to get ready.

It’s crazy going into my second year of teaching – part of me feels so much more confident from all of the experience I gained last year. But the other half of me is still really nervous, but like the good, excited type nervous. I just can’t wait to start! To me it’s always so refreshing to start something new, to take on a new challenge, to be super busy but loving it. And it’s even more fun when you get to do that with a bunch of lovable little ones!

Our school just opened two years ago, but it’s in a pretty old building. It’s actually great because the classrooms are massive, but the air conditioning is…minimal. Think window units only. It gets HOT. I’ve been stopping by my room a few times a week to work on things, prepare my classroom, stuff like that. Every time, I leave dripping sweat, but that’s no problem when some of these frozen banana almond butter bites are waiting for me at home!

Because the beginning of the school year tends to be super busy, I’ve been baking up a storm. Tempting sweets have been in no short supply around here lately, and the husband – AKA Beaming Banana’s favorite taste tester! – has not complained. Good thing they’re all vegan/healthy 🙂

One recipe I went a little crazy with was homemade almond butters. I was so excited that they all turned out super legit. I mean, it’s almond butter, so how could you really go wrong?! Literally my favorite food of all time. I had to do something with this abundance of almond butter heaven. Naturally, I went to my favorite fruit and the namesake of this blog. These vegan frozen banana almond butter bites were the perfect solution!

These bites are super easy to make and perfect for the hot summer months, and full of good for you ingredients – just bananas, homemade natural almond butter, unsweetened cocoa and almond milk. Once your cute little sandwiches are assembled, freeze them for about 2 hours before dipping them. Honestly I’d do it without even dipping them next time, because they’re still delicious and less messy 🙂

Vegan Frozen Banana Almond Butter Bites

Prep Time: 20 minutes

Total Time: 1 hour, 20 minutes

Yield: 12 sandwiches


  • 2 bananas, sliced into coins
  • 1 tsp almond butter for every 2 slices (to make sandwiches)
  • Chocolate drizzle: 1 tbsp cocoa, 1 tbsp almond milk, pinch of stevia


  1. To assemble the bites, slice the two bananas.
  2. Put 1 tsp almond butter on half the banana slices, and top with another banana slice to make a cute sandwich.
  3. Freeze for at least 2 hours.
  4. Drizzle with/dip in chocolate sauce, place on a plate/tupperware and freeze again until the chocolate is set, about 1 hour.
