Are you guys ready?! With Christmas just days away, I’m basking in the glow of my Christmas tree lights as much as possible, finding excuses to walk and drive around at night to look at the beautiful lights, and the Christmas music playlist has been on repeat for days (okay fine, months) now.

How’s your Christmas baking going?! I want to hear what all you guys have baked up and what you’re loving the most. Ya know what goes great with all those cookies, bars, and candies? Vegan hot cocoa.

The Grinch mug is optional, but HIGHLY recommended.

Vegan Hot Cocoa

This vegan hot cocoa is made with just three healthy ingredients – pea milk, cocoa powder, and stevia. I use unsweetened pea milk rather than almond milk for the amazingly thick texture. Add some cocoa powder, I always use extra dark, and some stevia for sweetness! That’s it. I would say you can mix it by hand, but a blender really is the best way to go because cocoa powder is annoying AF and hates mixing into anything, as you can see by the cute (NOT) chunks in the top of mine here.

So if you aren’t like me and don’t strangely enjoy chunky chocolate on top of your vegan hot cocoa (I really do like it, ask my husband, I’ve choked on dry cocoa powder WAY too many times, but it’s worth it), blend it up, then you can heat it up on the stovetop or in the microwave. THEN you can put it in a little thermos and drive around to look at the lights one last time!

Vegan Hot Cocoa

Yield: 2 servings

Ingredients

  • 2 c vegan pea milk (I use unsweetened)
  • 2 tbsp dark cocoa powder
  • 2 tbsp stevia

Instructions

  1. Combine all the ingredients in a blender and blend until totally mixed.
  2. Pour into a mug and microwave to desired temperature, or heat up on the stove.
  3. Optional: top with vegan whipped cream and more cocoa powder!
