I’m officially addicted to berries. During the summer they’re just impossible to resist! I know you understand. They’re the perfect sweet, healthy snack, and plus at the grocery store you can finally get perfectly ripe (rather than moldy/mushy) berries for less than $8 for a teeny package. Nope, now that it’s summer the berries are plentiful, ripe and sweet, and so pretty.

This recipe is the first of many in which berries are the star. These vegan no bake vanilla berry energy bites are perfectly poppable and so summery. Plus, they couldn’t be easier to make!

These no bake bites are similar to some I’ve made in the past – they start with oats that are ground into flour, and all you need after that is some vanilla protein powder, frozen mixed berries, and dates! The berries are slightly sweet on their own, but the dates gave the bites the perfect amount of sweetness.

As far as the protein goes, I used Sunwarrior vanilla flavor, but use whatever you like! You may need to adjust other ingredients depending on how absorbent your protein is. OR you could just add a little bit more oat flour and leave the protein out altogether. I personally love the extra protein punch, because they are ENERGY bites after all. The protein makes them little more filling and gives them a slightly sweet vanilla flavor.

To give these vegan no bake vanilla berry energy bites their summery berry flavor, I simply blended mixed frozen berries with water. Also, using frozen means you can enjoy these bites year round! This berry liquid mixture goes right into the batter for the no bake bites, giving them their pretty purple color and tons of berry goodness. You could definitely go with just one type of berry or probably any frozen fruit you like! I was thinking cherry would be awesome too…that may have to happen soon. But for now we’re definitely satisfied with these berry beauties.

Talk about an easy, healthy treat – just oats, protein, berries, and dates. You can’t go wrong! These bites are soft with a slight chew from the oats, sticky sweet from the dates and the berries are the perfect flavor twist to keep things interesting! I was thinking these would be perfect to keep in the fridge all summer long for getting home from a long day at the pool, or even in the car for a long trip. These would be super fun for kiddos to help make. Try ’em!!!

Vegan No Bake Vanilla Berry Energy Bites

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: 8 bites


  • 1 c whole grain rolled oats, ground into flour
  • 1/4 c vanilla protein (I use Sunwarrior)
  • 1/2 c berries blended with 1/4 c water
  • 1/2 c date paste (I used 8 medjool dates blended with 1/2 c water)


  1. Grind the oats into flour and mix with protein powder.
  2. Blend the mixed berries with water, and stir berry mixture and date paste in with dry ingredients.
  3. Roll into balls and set in the refrigerator to firm up, about 30 minutes.
