Poppable, chocolatey, vegan no bake brownie bites! Made with just 4 healthy ingredients, these bites are vegan, gluten free, naturally sweetened, and they make the perfect snack or dessert.
Our first day of school is Monday!! I’m going to have 25 kids, I repeat, 25 FIVE YEAR OLDS TO BE IN CHARGE OF, so, maybe pray for me a little if you’ve got some free time. 🙂 But I met a lot of them last night at back to school night and it was amazing, they are SO cute I literally couldn’t handle it. So excited to get to know my new little nuggets!
Speaking of nuggets, this recipe was tricky to photograph. Want to guess why?
They aren’t the most aesthetically pleasing…little poo nugget looking balls of chocolate.
It’s okay, I can admit it. BUT they still make the cut, only because they are ridiculously delicious!
Aside from looking a little questionable, these vegan no bake brownie bites disappear extremely fast. They’re a simple, no bake mixture (hooray for no heat!) of coconut flour, cocoa powder, dates, and almond milk.
The coconut flour is super absorbent, which is why you need a decent amount of almond milk. But the coconut flour gives such a rich, soft texture to these bites, so it’s worth all the mixing and rolling, trust me.
This amount of dough made abut 35 bites for me, and just for fun I calculated the calories, and it came out to about 20 each with the ingredients I used. Talk about a healthy, quick snack that’ll curb intense chocolate cravings!
These vegan no bake brownie bites are soft, slightly chewy, chocolatey, and a perfectly poppable healthy snack. They reminded me of Timbits, the doughnut holes from Tim Horton’s. Plus, no oven required for this fun snack, which is always a perk in this crazy summer heat.
