Vegan No Bake Oatmeal Date Bites

Perfectly poppable naturally sweetened no bake bites. As pre workout fuel, a midday healthy snack to get you through the afternoon or a topping for a smoothie bowl, these vegan no bake oatmeal date bites are super simple (just four ingredients) to put together and perfectly sticky and sweet! Gluten free and naturally sweetened.

Happy Monday, friends! How was your weekend?! The idea for these vegan no bake oatmeal date bites was born out of my weekend activities, brainstorming the perfect mid-run snack. Joe and I decided to run a marathon here in Toledo in April, so we’ve started training! Running a marathon together before we take on the marathon of life!! I’m so excited to do it together. Our first long run (10 miles) was this past Saturday. I’ve always ran a lot and I work out everyday, but 10 miles sounded a little daunting! We finished it, and with pretty good time, and luckily the weather was awesome. We were talking about how we’d have to pack little snacks during the marathon just because it’s such a long distance, and our bodies will need some healthy fuel. I immediately thought of dates. Perfectly sweet, easily digested, and full of nutrients to keep us going to the end, they’re also easy to just pop in your mouth.

I wanted to use dates as the sweetener and sticky binder in some no bake bites, rather than traditional recipes that may use a nut butter – this is a lower fat alternative (nothing against nut butter, it’s my FAVE and the fats are healthy and great for you, I just wanted to change things up here!). Since these are no bakes I wanted to use whole grain oat flour as the base rather than something like chickpea flour that would give off too much flavor – the oat flour is simply whole grain oats processed into flour. It gives a slight nutty flavor and awesome texture to the vegan no bake oatmeal date bites. Not to mention whole grain oatmeal is AMAZING for you – full of fiber to keep you feeling full and satisfied, benefits to help keep your heart healthy, and it packs vitamins and minerals.

With just four ingredients and endless options for add ins/flavor variations, these vegan no bake oatmeal date bites are a perfect base recipe. A couple spins of the blender and some mixing, the only hard part of this recipe is waiting for your little bites to set in the fridge! The dough will be SUPER sticky and hard to work with right after blending/mixing, so I’d set it in the fridge for about a half hour and then roll into balls. After that they’re ready to be devoured, perfect for any time of day and whether you’re training for a marathon or just getting through a Monday back to work! They’re perfectly sticky sweet and have just a slight chew and texture from the oats – to die for. Completely naturally sweetened and filled with fiber, a snack you can feel GREAT about.

Vegan No Bake Oatmeal Date Bites

Prep Time: 30 minutes

Total Time: 30 minutes

Yield: 8 bites


  • 1 cup oat flour (whole grain oats put in a processor/blender to make flour)
  • 1 c date paste (I used 16 medjool dates processed with 1 cup water to make a paste)
  • Pure vanilla extract
  • Cinnamon


  1. Process whole grain oats in the food processor/blender until they resemble flour. Put into a bowl and set aside.
  2. Process dates and water in the food processor/blender until it forms a sticky paste. Add more/less water if the paste is too runny, too thick, etc.
  3. Add cinnamon and vanilla to the oat flour, amounts based on your preference.
  4. Mix the date paste and oat flour thoroughly until a thick dough forms. At first the bites will be very difficult to work with - I recommend setting it in the fridge/freezer to set up for about 30 minutes.
  5. Roll the dough into balls, and store in the refrigerator.
