First off can I just say I CANNOT believe this is the last day of February!! And when I say I can’t believe it, what I really mean is I couldn’t be happier. Hooray for March, warmer weather, Easter, flowers, spring time, and our July wedding coming so, so soon! It’s going to be a wonderful next few months, and I couldn’t be more excited. What else is exciting? These vegan no bake peanut butter oatmeal banana bites. Sorry for the title that’s approximately as long as my entire life so far.

These no bake bites are a slightly modified version of my the no bake oatmeal date bites I posted awhile ago (so if you’re in need of a nut-free no bake bite recipe, head that way!). These use peanut butter rather than sticky dates as a binder, and bananas as the sweetener! Just mash up the (really ripe!) bananas with a fork, stir in the peanut butter (or any nut butter you want!) and add the oats. Roll into balls and leave in the fridge to set, and after about 30 minutes your cute little bites are ready to go!

I love these because they’re SO, so yummy, but so versatile, too! I was making this batch for Joe specifically (hence the alien raisin ball above), so I used peanut butter. If I were making them for myself, I’d definitely go with almond butter which would work just as well. I use all natural, unsweetened nut butters, so the kinds you find at the store that ONLY have nuts as an ingredient, and that you have to stir quite a bit to evenly distribute the oil from the nuts.

These vegan no bake peanut butter oatmeal banana bites are also really kid friendly! Let your little ones pick out mix-ins and get messy mashing up the banana and stirring the ingredients together. Can you tell I teach kindergarteners? I also love that these bites are no bake – no dirtying of extra pans or turning the oven on required! That’s always a plus especially on busy days when we want a quick, easy, healthy snack.

Vegan No Bake Peanut Butter Oatmeal Banana Bites

Prep Time: 30 minutes

Total Time: 30 minutes

Yield: 8 bites

  • 1 cup whole grain oats
  • 2 tbsp ground flaxseed
  • 1 large ripe banana
  • 1/2 cup natural peanut butter
  • Almond milk if necessary to thin peanut butter/banana mixture
  • Cinnamon (optional)

  1. Mix the oats and ground flaxseed until well combined.
  2. In a separate bowl, mash the banana and thoroughly mix with peanut butter.
  3. Combine the wet and dry ingredients - if it seems way too thick, add almond milk a tablespoon at a time just until the ingredients are able to combine and still stick together.
  4. Roll into balls and put in the refrigerator to set for about a half hour.
