Vegan No Bake Protein Bars

Vegan no bake protein bars made with just 3 ingredients! A soft, delicious bar that’s vegan, easily made gluten free and naturally sweetened with healthy ingredients. None of the artificial, store bought stuff! Plus, they taste so much better.

As soon as you tell anybody you’re plant-based/vegan, it’s almost a guarantee you’ll get the whole “where do you get your protein??” interrogation from someone at some point.

Usually it’s coming from a place of genuine concern, but a lot of people just don’t know that plant foods provide ample protein. Americans actually get WAY more protein than they need, which is why a lot of us are so sick and overweight. What’s even worse is most people say the word “protein” and take it as a synonym for animal products. There are literally hundreds of other options that don’t have cholesterol, saturated fat, and all the other nasties that animal products contain that wreak havoc on your health.

Protein is NOT an issue when you’re getting a balance of delicious, whole, plant foods! Win win win.

Of course plant based sources of protein are plenty, in their whole forms – my favorites are lentils, sweet potatoes, chickpeas, and nut butters. But sometimes when you’re on the go or even just for some fun flavors, protein powders are a quick way to give yourself a little boost.

Products that are marketed as “health foods” are often tricky, typically loaded with tons of added sugars and weird ingredients. So when I buy protein powder, I’m extremely picky and read the label like 17 times. I like to make sure it’s up to par with what I want to put in my body!

Sunwarrior is my favorite brand for sure, because their proteins are naturally sweetened, vegan, and raw. They’re minimally processed and they still taste GREAT. I highly recommend their brand if you’re looking for a good protein powder option!

A few weeks back, my goal was to make a protein bar that my sweet husband could enjoy as a quick morning snack on his way to work after a workout. I wanted them to be no bake and EASY. Now, these are a regular for us! They’re irresistible.

These bars are a simple mix of protein powder, whole grain rolled oats, and dates. That’s it!! So you’ve got protein, fiber, healthy complex carbs, and natural sweetness, all in one delicious little bar. Joe ate all 8 of these in two days (we work out a lot, the man needs energy!) and was raving about them.

These vegan no bake protein bars are soft, chewy, protein packed, naturally sweetened, and perfect for post workout or just a midday snack. I hope you love them! I’m thinking since school starts in ONE WEEK (eeeeep!) I’m going to have to make another batch for some energy to keep up with my kindergarten kiddos. 🙂

Vegan No Bake Protein Bars

Prep Time: 20 minutes

Total Time: 20 minutes

Yield: 8 protein bars

Ingredients

  • 1 1/2 c oats ground into flour
  • 2 scoops protein powder (I used Sunwarrior chocolate, and 2 scoops was equal to about 1/2 c of protein, so feel free to try to use this amount of a different brand, though it may act differently!)
  • 1 c date paste (I used 16 medjools blended with 1/2 c water)
  • 1/4-1/2 c water

Instructions

  1. Combine the oat flour, protein, and date paste and mix thoroughly until all ingredients are combined. This may take a little while, but eventually the sticky dates will soak up all the flour/protein - make sure it's all totally mixed, or the bars won't hold together!
  2. Press into an 8x8 pan, flattening with your hands or the back of a spatula until it's all spread evenly.
  3. Chill for at least 4 hours before cutting into bars - can be stored in the fridge or at room temperature.
