Vegan no bake protein bars are soft, super chewy, and full of plant protein! Made with just a few healthy ingredients.
Happy Monday, beautiful! Hope you’re having a wonderful start to your week so far. I’ve got a sweet lil treat to brighten up your Monday, so it’s only up from here, friends! When I made these OG granola bars, they were absolutely WAY better than I could’ve expected. Of course I knew they wouldn’t be bad, but like, how good can a granola bar be?
Spoiler alert: really, really, mind blowingly good. Sweet, chewy, perfect in every way. PLUS ya don’t even need your oven!
Today, we’re taking those original granola bars and giving them a plant protein-packed upgrade.
Now, don’t be confused – vegans that eat a variety of whole, plant foods will have NO trouble getting sufficient (more than enough!) protein. How many people do you know that have died of protein deficiency? None, ya, same. How many do you know that have died of heart disease/cancer/diabetes? Sadly, probably more than one. Just a reminder – animals themselves are not protein. Protein is virtually in every food that exists, just in varying amounts. We don’t need to eat animals to get adequate protein. In fact, while you get protein from eating a dead animal, you also get a multitude of negatives, including cholesterol, saturated fat, hormones, antibiotics, and the list goes on. Not to mention that an animal suffered tremendous cruelty and suffering for the simple pleasure of that meal. Skip the middle animal, and go to the source – plants!
If you are still concerned about protein, the good news is there are so many amazing vegan plant foods that pack tons of protein, and a lot of brands that make clean, healthy vegan protein powders, too! My favorite right now is Garden of Life (not sponsored, I wish, haha). I like their proteins because the ingredients are all easily recognizable, there aren’t very many ingredients at all, and they’re raw!
These vegan no bake protein bars have just a few ingredients, and we’ll start with whole oats, flaxseed, and protein powder. Obviously you can use whatever plant protein you like!
Next, just add some date paste for sweetness and a little bit of nut butter to bring it all into a thick, slightly sticky mixture. I typically use almond butter because it’s my favorite, but peanut butter definitely works, though it’ll give it a stronger flavor of peanut butter, which I can’t say would be the worst thing in the world!
Press the mixture into a square pan, refrigerate overnight, and you’re done! As much as I love fun, more elaborate sweets (which for me is still super simple, let’s be honest), no bake treats are amazing for their simplicity, right?! The best.
These vegan no bake protein bars are just as soft, sweet and chewy as the original granola bars I love so much, but they have the addition of the sweet, chocolatey protein that makes them even more satisfying. SO good. I can’t wait to try these with some add ins for crunch and other protein flavors.
