Vegan No Bake Pumpkin Spice Bites

No bake and so easy to make, these vegan no bake pumpkin spice bites are perfectly sweet and spiced! These poppable fall bites can be made gluten free and they’re sweetened naturally. Made with just 4 ingredients!


Happy Thursday! Today’s kind of like a Friday for me, because we have a teacher work day tomorrow, so no students. Then I’m off to Columbus to see my parents for the weekend! Joe will be in Kentucky with some work friends for a race they’re doing there, so it’ll just be our dog Rumor and I. As always I hate to be away from the husband, but I can’t wait to hang out and catch up with my parents! I have a couple things I’d love to bake them, and these no vegan no bake pumpkin spice bites may have to make an appearance as well. They’re just so easy, not to mention super cute and delicious!


I love love love to bake, but sometimes no bake treats are the way to go! Simply combine a few ingredients, fridge them for a bit to set up, and devour. These never last long in our apartment. Have you seen the other flavors I’ve made?! Oh, and you can’t go wrong with a no bake protein bar.


I’ve baked quite a bit with pumpkin already, and there’s even more to come! But today, we’re talking a SUPER easy snack or dessert. All you need is oat flour, pumpkin pie spice, pumpkin puree, and some dates to make into paste and to give the bites sweetness. Seriously, it couldn’t be easier to throw these fun treats together.

These vegan no bake pumpkin spice bites are sweet, soft with a slight chew from the oats, and perfectly poppable. I loved this flavor for fall! Have a wonderful weekend. 🙂

Vegan No Bake Pumpkin Spice Bites

Prep Time: 30 minutes

Total Time: 30 minutes

Yield: 8 bites


  • 1 c oat flour
  • Pumpkin spice, to taste
  • 1/4 c pumpkin puree
  • 1/2 c date paste (I used 8 medjool dates blended with 1 c hot water until smooth)


  1. Grind the whole grain oats (gluten free, if necessary!) until they reach the texture of flour.
  2. Add the pumpkin spice to the oats.
  3. Mix the pumpkin puree and date paste, and add to the oats.
  4. Roll into balls and store in the refrigerator to firm up, about 30 minutes.
