As a kindergarten teacher, my mornings start early and they are busy busy busy! We’re all busy though, right? I always start my day with a workout and it’s a whirlwind from there, between getting ready, getting to work and preparing for a day with my nuggets. Breakfast is a nonnegotiable – I just don’t understand people that “don’t eat breakfast.” I’m sorry, what? It’s a short time between the end of my workout and when I eat breakfast, but I’m somewhat of a monster until I do eat. Because I work out in the morning, I’m always ravenous. Vegan overnight banana buckwheat cereal to the rescue.
Before we talk specifics, an important note – these are not whole buckwheat groats, and obviously it’s not buckwheat flour, either. It’s right in the middle. I always get the Bob’s Red Mill brand, and there’s a link below to get it on Amazon. But it’s called buckwheat hot cereal – basically it’s not the whole big, tough groats, but ground a little more fine so that you don’t have to cook them. Needless to say, I was thrilled to discover them at the grocery store a couple weeks ago. I’ve been loving it for breakfast during the work week, for several reasons.
Yes, you can also use oats. But I highly recommend trying the buckwheat!! Still just as hearty and comforting, but a lil something different. Plus, totally gluten free!
First of all, it couldn’t be easier or faster to prep, which is important during the work week, because unfortunately most of us don’t have time to devour a stack of these gems on a work day. Pour your buckwheat into a tupperware container, mix in some mashed banana, pour in some almond milk, and throw it in the fridge. Done.
After sitting overnight, or even just a few hours, the buckwheat will absorb a lot of the milk. I love it really thick and creamy, but feel free to add more plant milk before you eat it!
Possibly my favorite part of vegan overnight banana buckwheat cereal is that it’s so, so versatile. I try to do something different every week, whether it’s adding blueberries or some other fruit, or spices like cinnamon, or even some cocoa powder for a chocolatey spin.
