Vegan rawnola is an easy no bake, sweet, crunchy, chewy topping for any of you favorite treats, or just for healthy snacking!
Dearest granola: I still love you a lot, but I’ve recently fallen in love with vegan rawnola. Don’t be mad.
Seriously though, any excuse to leave that oven off in this summer heat, right?! Sweaty AF.
Have you guys heard of rawnola? Probably. It’s just a way to make a granola-type mix, only totally no bake. Quick, easy, just as delicious! Not exactly a new concept, but hey, I hadn’t tried my own before, and I’ve been smoothie bowling-it for breakfast like crazy all summer. Smoothie bowls can always use a crunchy, chewy, sweet topping, so vegan rawnola had to happen.
Literally with pressing pulse on your food processor about 5 times, you can have this sweet, crunchy, heavenly vegan rawnola. I use a mix of nuts, usually almonds and cashews cause those are my fave! Dates, of course, because I am myself, and dates are the best chewy, sweet addition to help everything stick together just enough. I also threw in some chocolate chips and raisins after pulsing in the food processor, because chocolate is always a welcome addition in this girl’s mouth. Was that weird to say? Sounded weird after I typed it, but let’s just move on.
The best, most fun part of vegan rawnola is you can totally take it in any direction you want! Don’t like almonds? Use walnuts or even pecans instead. Add some raisins or other dried fruits, coconut, or even chia seeds would be cool! Make it your own.
Vegan rawnola is such an easy snack to throw together, and it’s so fun to customize with your favorite flavors! Make a big batch and you’ve got a healthy sweet treat to add to snacks and breakfasts all week.
