Hope you all had a Happy Easter! Faith is a big part of my life that I don’t share here often, but I’m so grateful for the Lord’s birth and his grace and blessings in my life each and every day. One of my favorite blessings…granola!

It’s no secret that granola is basically the food version of crack. Or at least, what I’d imagine crack is like in food form, because fortunately I have no prior experience with crack. Anyway.

Let’s chat about how this vegan strawberry chocolate chip granola came to life. A couple months ago I had the lovely experience of discovering buckwheat groats in all their crunchy glory, and since then I’ve fallen in love with using them to make nut free granolas. Nothing against nuts, their nutritional powerhouses, but I know myself and if I’m eating granola, I’m going to eat more than a handful. I love my classic recipe and this decadent chocolate version, both made with just 3-4 healthy ingredients, because they aren’t super high in calories or fat, so I can have a bit larger of a portion.

Trust me, you’ll want a larger portion, too. It’s so addictive! I love trying new flavors of that original 3 ingredient nut free granola recipe, and now that it’s finally feeling like spring, I wanted to throw in some berries, and of course a little chocolate never hurts. Ta da! Vegan strawberry chocolate chip granola. It’s crunchy, sweet, and just altogether perfect.

This granola starts with the same base as my classic nut free granola recipe! All you need is some rolled oats, buckwheat groats, and dates. I always use Date Lady syrup, because it’s so concentrated and sticky and amazing. And dates are the only ingredient! You could probably use homemade date paste, but it may affect the texture.

Mix that up, pour it onto a lined baking sheet to avoid having to clean a sticky mess later, and bake for about 20 minutes. It can go from cooked to burnt fast, though, so watch it closely! Once you take it out, let the granola sit out on the counter for a couple of hours – this is a crucial step, as it’s when the granola develops it’s crunch.

Once the granola is cool and crunchy, add the mix-ins! To make this vegan strawberry chocolate chip granola, all you need is some vegan chocolate chips and freeze dried strawberries. They’re pretty easy to find at most big grocery stores, and seriously add amazingly powerful berry flavor! Plus, you can truly never go wrong with the chocolate + strawberry combo.

If you’re at all a granola/cereal lover, you need this vegan strawberry chocolate chip granola in your life. The base granola itself is so addictive, but when you add chocolate chips and strawberries it takes everything to another level of perfection!

Vegan Strawberry Chocolate Chip Granola

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Yield: 6 servings, about 3 cups of granola

Ingredients

  • 2 c whole grain gluten free rolled oats
  • 1 c buckwheat groats
  • 1/2 c date syrup - I used the Date Lady brand for this recipe
  • Freeze dried strawberries
  • Vegan chocolate chips

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, mix the oats and buckwheat.
  3. Add the date syrup and stir until the oat/buckwheat mixture is evenly coated with the date syrup.
  4. Line a baking sheet with a nonstick mat or parchment paper and pour the granola onto the sheet, then bake for 20 minutes.
  5. Allow the granola to cool for 1-2 hours on the counter - this is when it will get crunchy!
  6. Break the granola into chunks and mix in the freeze dried strawberries and chocolate chips.
