Wishing all of you babes a super happy, healthy, fun, relaxing, safe thanksgiving with your loved ones! I felt like taking a little trip down memory lane for this year, and I love sharing some personal life stuff with you guys in between all the recipes! So, here are just a few significant moments I’m thankful for from 2018.
With the help of unconditional support and encouragement from my husband Joe, as well as the love and support from my parents and friends, I took the leap and transitioned my career from teaching kindergarten to full time blogging, got my certification as a plant-based nutritionist, and started my podcast. I’m living my dream of doing what I love on a daily basis, and I can’t even put into words how amazing it feels. I’ve never been happier than I am now. So, so thankful!
Just when I thought I couldn’t love a little creature as much as I love Rumor, our little family of 3 grew to 4! We rescued Tyson in July, and at just 2 years old, he had already endured more trauma than any sweet animal should have to go through. His ears were extremely damaged after someone attempted (and failed) to crop his ears, and he’s basically completely deaf as a result. Despite all that, he’s the most snuggly, playful goofball you’ll ever meet, which means he fits right in with Rumor. 🙂 So thankful for my two little babes, who bring so much love and laughter into my life on a daily basis.
For my birthday, Joe took me on an amazing visit to Barn Sanctuary to spend time with their sweet animals. All were rescued from what would’ve been a horrible fate within the factory farming industry, instead getting the chance to live out long, peaceful lives.
I took a quick trip to Virginia with my dad, and we got to enjoy one of our favorite hikes. My dad and I are very close, so I always cherish some quality father daughter time!
Joe and I have gone apple picking every fall since we started dating back in 2012, and I think this year was the most fun we’ve had yet! We went a bit later than usual, so it was quite chilly but that added to all the good fall feels. We picked about 20 pounds of incredibly sweet, juicy apples, and I put them to good use in these divine no bake bars and this incredible, perfect for thanksgiving pie. Joe is currently in grad school (while working full time) and ridiculously busy, so any fun dates like this are extra special.
Just a few weeks ago we got to go on a quick but super fun trip to California with my parents! We were there because I was a bridesmaid in a friend’s wedding, and made a little vacation out of it, staying a few days after the wedding to explore. We went on a beautiful hike an had an INCREDIBLE meal at Trilogy Sanctuary, a super cute all vegan place. My dad and I both got the chili yam bowl, Joe and my mom each got the mushroom barbacoa tacos, and Joe and my mom shared the nachos. Desserts included buckwheat banana nutella crepes, carrot cake, and a cookie ice cream sandwich. ALL vegan, and all ridiculously delicious. Easily my favorite vegan restaurant I’ve ever been to. We had so much fun on this trip, and of course, I always love spending time with bae AND my wonderful parents!
Something big and exciting happened for Joe, and I can’t share details quite yet, but we have some exciting news as a result! I’m so, so excited and proud of him. Nobody has been there for me more to encourage, support, and help me get to living my dream life, and I couldn’t be happier for him. Naturally, we celebrated with some of his fave vegan candy, cookies, ice cream, and pizza!
There are so many more wonderful memories from this year, with many still to be made over thanksgiving and Christmas. But I only have so many photos and don’t want to write 20 pages here, so I’ll leave it at that!
And of course, I couldn’t not mention how so very thankful I am for each and every one of you supporting and reading my blog, making my recipes, following me on social media, and listening to my podcast.
