A couple weekends ago, we finally got around to apple picking, and it was as glorious as every other year. Joe and I frolicked around the trees, we took some fun photos, and ate our bodyweight in apples before we even left.
Since we brought our apple haul home, I’ve been baking alllll the apple goodies I can think of. I’ve made this bomb caramel apple baked oatmeal several times, which is so perfect for a cozy fall breakfast. But if I’m being honest, I’m not typically huge on apples in desserts. I guess that explains why the apple recipes are few and far between on the blog. Good news though, I do have a raw apple dessert coming soon that I am SO excited to share! Anyway, I’ll stay focused on what we’ve got today, which is some sweet little vegan apple pie breakfast cookies.
While apples aren’t my first choice for dessert, I am all about using them at breakfast. Especially in the fall when they’re so sweet abundant, they’re practically begging to be used. These cookies are a great make ahead option, for you meal prep babes! It’s a really easy, fast recipe that you could bake on a Sunday to have a sweet, healthy breakfast or snack treat ready to go for the busiest fall week!
To start, you’ll need oats. You’ll blend some to flour consistency, and leave the rest whole. We’re blending some of the oats into flour to help hold the cookies together, and leaving some whole for their great chewy texture. Mix in some cinnamon for the ultimate fall flavor, and just because it’s a no brainer when we’re talking about apples, right?
Next is some date paste for super rich sweetness, and because I didn’t want these to be too sweet, I also add unsweetened applesauce. This gives the cookies moisture and softness without them being tooth-achingly sweet – remember, we still have sweet apples to add! Mix that in a long with the flax eggs and vanilla extract, which gives these the apple pie-esque flavor.
Stir everything together into a thick dough, then fold in the chopped apple. You can use whatever apple variety is your favorite. I love pink lady or honeycrisp! Also, the choice is yours with whether or not to remove the skin, but I usually do. There’s so much nutrition there, but the texture can get a little weird when cut into small pieces. I just save the skin and give it to my dogs, who absolutely love it.
If you do want to add some mix ins like nuts or raisins, take out the same amount of apple. The dough is full of apples in the recipe below, and if you overload the dough they won’t hold together! So, if you want to add 1/4 cup of nuts, use only 3/4 cup chopped apple.
Use about 1/4 cup of dough for each cookie, shape them on a lined cookie sheet and bake for about 20 minutes.
These vegan apple pie breakfast cookies are super chewy and dense in the best way. Full of cinnamon spiced flavor and loaded with sweet apples, they’ll give you tons of energy and power you through a lovely fall day!
