Vegan Jumbo Chocolate Cookies

Soft-baked, vegan jumbo chocolate cookies! These cookies are firm on the outside, soft and gooey in the middle, and loaded with rich chocolate flavor. Vegan, easily made gluten free with certified GF oats, and naturally sweetened.

I survived the first week of school! 25 feels like SO many little kindergarteners, but I got lucky because all my kids are really, really sweet. It’s going to be a challenging but super fun year!

Also, my feet hurt. Any other early childhood teacher will tell you it’s basically a job that requires you to stand/run/dance around the ENTIRE day. Love that I’m feeling active all day but I’ve been absolutely whipped by the time the evening rolls around. This girl is definitely looking forward to a relaxed weekend of lounging with the husband and pup! Sounds like the perfect end of the week celebration to me.

The best way to celebrate any occasion? Chocolate – always!

I made these cookies for a charity fundraiser at Joe’s work. So fun, right?! Due to the fact that I’m absurdly indecisive, I went back and forth for literally about a week about what to make for this thing. Of course, I ultimately came to chocolate.

These vegan jumbo chocolate cookies are just that – crazy chocolatey and unapologetically huge. Double the dose of chocolate, with cocoa powder in the dough and drizzled on top, if you’d like (and trust me, you’d like). It’s crazy how decadent and rich they are, because the ingredient list is so simple.

The combination of whole grain oat flour, cocoa powder, coconut flour, and dates produces a soft, tender, super decadent chocolate cookie. One batch makes just six cookies, but they’re pretty humongous, AKA absolutely amazing.

The oat flour and coconut flour provide fiber and a soft-baked texture. Cocoa powder obviously gives the rich chocolate flavor. I like to use Hershey’s special dark for even more powerful chocolate punch, but any cocoa powder should work fine. I used a whole cup of date paste to be sure the cookies were sweet enough, and like always they got the job done. Perfect caramely, natural, sweet perfection.

I was feeling fancy and added a drizzle to some of the cookies after they cooled. I simply chopped and melted a 100% chocolate bar in the microwave, added a little bit of stevia, and gently drizzled over the top of some of the cookies.

Is it too much to call a cookie sexy? Moving on.

I set the cookies in the fridge to cool until the hubs got home. He promptly took a big bite of one with the melted chocolate on top, and it made the most satisfying, crunch/crack sound.

The chocolate firmed up into a “magic shell” like texture!

I’m thinking another batch of these vegan jumbo chocolate cookies may have to happen tomorrow, ya know to officially celebrate getting through the first week of kindergarten.

Vegan Jumbo Chocolate Cookies

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Yield: 6 jumbo cookies


  • 1 1/2 c whole grain oats ground into flour
  • 1/4 c coconut flour
  • 1/4 c unsweetened cocoa powder (I use Hershey's special dark)
  • 1 c date paste (I used 16 medjool dates blended with about 1 c hot water)
  • 1 c unsweetened almond milk


  1. Preheat the oven to 350 degrees.
  2. Combine the oat flour, coconut flour, ad cocoa powder and stir until combined.
  3. Make the date paste and add that to the dry ingredients, along with the almond milk.
  4. Stir until thick cookie dough forms, and portion dough into 6 cookies on nonstick baking sheet or a silpat nonstick mat.
  5. Bake for 10 minutes.
