Over the next couple weeks I’m going to give some sneak peek recipes from the book, starting with these vegan no bake chocolate chip cookies. These are SO simple, and they’re the perfect snack or breakfast treat. All you have to do is throw some oats, dates, and vanilla extract into the food processor, shape the dough into little cookies, and top with some chocolate chips. The whole process takes about 10 minutes!
The cookies in the ebook aren’t like traditional baked cookies, obviously. Think of a no bake energy bite, shaped into cute cookie form! That’s what these are. Their texture is so dense and chewy, and they really are so satisfying and will help power you through your day. The ebook has many other cookie recipes as well as nut butters and bars! All no bake, healthy, super simple, and of course, vegan!
