Does anybody else feel like once July comes to an end, every day in August is just like savoring the last beautiful and precious moments of summer before we blink and it’s gone again?!
Don’t get me wrong, I actually love experiencing all four seasons (even if I wish winter would die after Christmas). But there’s something about summer that will forever hold the top spot in my heart. It’s a combination of the hot sun, extra long days, and of course, all the cool, summery sweets.
So I feel it’s oh so appropriate that I’m sharing vegan ice cream sandwiches on the very last day of July. That way you have no excuse NOT to have made these multiple times before summer is gone!
Bake and cool your cookies completely, then make the nice cream. This is when a high power blender is best, like a Vitamix. You want to use as little liquid as possible, so that the nice cream is extra thick to hold up inside the sandwiches.
Plop some nice cream on a cookie, then gently sandwich another on top. Ta da! Prepare for the messiest but most delicious treat you’ve had all summer. You can definitely make the sandwiches then refreeze everything for a bit so they get a little more solidified, but just accept that these are fun and messy to eat regardless! You could also definitely use store-bought vegan ice cream, So Delicious has some great no sugar added options that we really like.
These vegan ice cream sandwiches are so perfect for summertime, and just plain fun. The cool, creamy ice cream between soft and chewy cookies is so, so lovely. There’s an endless amount of possibilities for bomb flavor combinations here, so have fun with it!
