October is here, which means it’s time for all things pumpkin, and guys, I AM SO READY FOR IT.
This is my first fall in 3 years not being a teacher in a classroom. The beginning of the school year was always an especially crazy time. As a result, the fall season in general kinda became synonymous with life feeling stressful and chaotic. It’s such a beautiful season that in the past I’ve totally rushed through and just plain didn’t appreciate while it lasted, because I was too busy dealing with work stuff.
This year I’ve totally taken the time to really savor and fall back in love with this gorgeous time of year, and it has been absolutely amazing so far. Now that I have the luxury of making my own schedule, I’m making time to bask in the glory of the incredible nature, but especially to enjoy slow mornings with cozy, satisfying breakfasts. PUMPKIN is a necessity in like, all food you eat for all of October, right? Maybe that’s pushing it, but I’m ALL IN on the pumpkin, especially at breakfast.
So, let’s kick off the season of all things orange and round with this vegan pumpkin spice oatmeal bowl! Prepare the oats simply by soaking some oats and ground flax in hot water until it’s nice and thick, then add the pumpkin pie spice, pumpkin puree, and mashed banana for sweetness. I didn’t think the banana was overpowering at all, but if you don’t like banana you could definitely use stevia or some chopped up dates to sweeten.
Top with whatever fruit you like, a blob of nut butter, and another sprinkle of pumpkin pie spice, and you’re ready for your dream fall breakfast.
One of my favorite things I’ve been doing so far this fall is taking the time to enjoy slow mornings. Getting in a good workout, preparing a simple but super comforting breakfast, and eating mindfully. There’s nothing like a chilly, quiet fall morning snuggled up with a blanket and a bowl like this. Soooo warm and cozy. Everything wonderful about fall. There’s no better way to start a happy, healthy, productive day!
