Vegan Chocolate Protein Pancakes

Happy Memorial Day weekend and beginning of summer! How was your weekend? We went back to Columbus and got to spend time with both Joe’s family and mine, which is always great. My little brother had his grad party yesterday which was super fun cause I got to see all the old neighborhood friends I grew up with, but also so weird – how is my baby brother graduating high school!? At least he’s going to Ohio State, makes it easier to accept that he’s all grown up now. 🙂  I have two brothers and I’m pretty close with/protective of the one graduating this year. He’s grown up into such a great guy, I’m already so proud of him and I can’t wait to see what he accomplishes at OSU! We always tease this brother about being a “plain” eater – he likes cupcakes WITHOUT frosting, for goodness sake! I have a feeling though that even my slightly picky brother would be a fan of these vegan chocolate protein pancakes.

I’m obsessed with these, and they are regularly the breakfast of choice at our apartment. And sometimes dinner, because breakfast for dinner is the best, am I wrong?! Maybe I’ll use making some of these as an excuse to visit my little brother next year, so he’s ya know, not eating crappy college food all the time. Sounds legit to me!

These vegan chocolate protein pancakes are literally my breakfast every weekend lately, usually both Saturday and Sunday morning. Joe and I came up with the recipe while training for the marathon – we’d get back from long runs STARVING, but we trained in the winter so we always wanted something hot. Because these pancakes are so fast and easy to make, they were perfect! PS, they’re basically the same recipe as my 2 ingredient waffles, just in pancake form.

All you need is whole grain rolled oats, which you’ll grind into flour. Then it’s just your plant-based protein powder of choice – you know by now that I LOVE Sunwarrior, so if you’re looking for a recommendation, check it out! I also add ground flaxseeds both for their health benefits and the amazing texture they add to the pancakes. Some almond milk to bring the batter together, and these vegan chocolate protein pancakes are ready to be cooked! We have a pancake griddle that’s nonstick so I just throw them on there for about 2 minutes on each side – I like mine a little gooey in the center 🙂

In addition to the pancakes themselves, I love to make a simple protein “frosting.” I just mix a little bit of the Sunwarrior chocolate protein with almond milk and spread it between the layers of my pancake stack. If you’re feeling crazy, add a teeny bit of coffee too for a mocha flavor! It adds the perfect amount of moisture and even more of the great chocolatey protein flavor.

These vegan chocolate protein pancakes are light but still with an amazing hearty texture from the oats and flaxseeds. The protein comes through giving them a slight chocolate flavor, but you can also add some unsweetened dark cocoa powder and a little more milk for even more chocolate flavor. They are NOT dense like some pancakes can be, but nice and fluffy and they definitely satisfy and will get you through the afternoon. Talk about a great way to start your day! High in protein, tons of fiber from the oats, omega 3s and antioxidants from the flax, you’ve hit a lot of your nutritional bases for the day.

Vegan Chocolate Protein Pancakes

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 5 pancakes


  • 1 c whole grain oats, ground into flour
  • 1 tbsp ground flaxseeds
  • 1/2 scoop chocolate protein powder (I use Sunwarrior)
  • 3/4-1 c almond milk
  • *optional: 1-2 tbsp unsweetened cocoa powder (you will need more almond milk if you add)


  1. Heat up your pancake griddle/pan.
  2. Grind oats in a food processor/blender until they resemble flour and mix in a large bowl with flax and protein.
  3. Add almond milk - you may need a little more/less depending on the protein you use. Mine needed 3/4 c! It should resemble typical pancake batter, not too runny but definitely not super thick.
  4. Pour batter into griddle and cook until the pancakes develop a slight crust/texture on the outside - I always under bake mine just a bit, about 5 minutes on each side.
