GUYS, CINNAMON BUN WAFFLES! This idea popped into my head randomly one day and I couldn’t get it out, so I went for it and oh my goodness am I so glad I did. I love breakfast ALL the time, but I feel like fall especially is such a sacred time for breakfast, am I right? There’s something about that cool, crisp air in the morning, and cozying up with a blanket, a warm mug of your fave beverage, and a hot, comforting breakfast.

Ingredients for vegan cinnamon bun waffles

  • Rolled oats: you’ll blend the oats to flour consistency, which gives a great dense, satisfying texture.
  • Cinnamon: cinnamon is a must, of course, and adds so much good flavor to the waffle batter.
  • Banana: I mash super ripe, spotty banana to sweeten the waffles.
  • Vanilla extract: vanilla flavors the waffle batter.
  • Nondairy milk: a little nondairy milk brings the batter together. I use unsweetened almond milk for neutral flavor, but any nondairy milk should work.

Tips for making vegan cinnamon bun waffles

  • Measure the rolled oats before blending into flour. I always list the amount of oats used BEFORE they’re blended for flour. So in this case, you’ll measure out 1 cup of whole, rolled oats, then put those 1 cup into your blender to make flour.
  • Cook according to your waffle iron’s instructions. All irons (and pancake griddles) are a bit different, so use whatever settings yours has. You’ll be able to tell when they’re ready by carefully poking the center with a clean finger or fork.
  • Have fun with the toppings. A drizzle of vegan yogurt adds tang and mimics cinnamon bun frosting, but a drizzle of nut butter or date syrup would be great, too.

As if waffles didn’t already scream comfort, these are SO so perfect. The vanilla extract and cinnamon in the waffle itself totally mimics the classic bun, and with a drizzle of tangy yogurt on top, it was seriously SUCH a fun weekend breakfast treat. Just an added benefit that it’s made with just a few healthy ingredients and fruit sweetened.

Vegan Cinnamon Bun Waffles

Ingredients
  

  • 1 cup rolled oats, blended into flour
  • 1 tsp cinnamon
  • 1 ripe banana, mashed
  • 1 tsp vanilla extract
  • 1/2 cup nondairy milk – I used unsweetened almond milk

Instructions
 

  • Preheat the waffle iron.
  • In a large bowl, mash the banana, then add the oat flour, cinnamon, vanilla, and almond milk and stir into a thick batter.
  • Pour the mixture into the waffle iron and cook until the iron indicates it's done – mine took about 10 minutes, but this will vary depending on your type of waffle iron!
  • Top with a drizzle of vegan yogurt, date syrup, and more cinnamon, and enjoy!
