GUYS, CINNAMON BUN WAFFLES! This idea popped into my head randomly one day and I couldn’t get it out, so I went for it and oh my goodness am I so glad I did. I love breakfast ALL the time, but I feel like fall especially is such a sacred time for breakfast, am I right? There’s something about that cool, crisp air in the morning, and cozying up with a blanket, a warm mug of your fave beverage, and a hot, comforting breakfast.
That’s where these vegan cinnamon bun waffles come in. A simple mix of oats, cinnamon, mashed banana for sweetness, vanilla extract, and nondairy milk. Cook til your waffle iron says they’re ready, top with some vegan yogurt (like cinnamon bun icing!!), a little date syrup if you’re feeling fancy, and DEVOUR.
As if waffles didn’t already scream comfort, these are PERFECTION. The vanilla extract and cinnamon in the waffle itself totally mimics the classic bun, and with a drizzle of tangy yogurt on top, it was seriously SUCH a fun weekend breakfast treat. Just an added benefit that it’s made with just a few healthy ingredients and fruit sweetened. Seriously, next time it’s the weekend, get into the kitchen and get your waffle on, queen! Cause you’re awesome and you deserve it.
