Vegan banana boats are sweet, gooey, and full of fun flavors and textures! The perfect summertime treat.
Am I alone in still being in disbelief that it’s already July?!

Summer is FLYING by, so I think we need to prioritize the summer sweets before their time is gone for another year. I mean, we’ve got all the time in the world to make vegan cookie dough cake whenever we want, but there’s something about vegan banana boats that just screams summer!
So the concept for these vegan banana boats is pretty simple, but oh so fun. Slice your banana length-wise, load it with fun, yummy things, bake until gooey and melty, let it cool just enough not to burn the roof of your mouth right off, and devour.
These feel so fun and summery to me because of course, you can bake them right on a bonfire! Wrap them in foil and set them right on top of your rack or pan, and give them 5-10 minutes. There’s really no set time, because fires/ovens run different, so just heat to your desired gooey-ness. Technical terms today, friends.
Unfortunately, our backyard lacks a bonfire, so I went the oven route. I have to say, it’s just as fun to bake these in the oven then run out to the backyard at sunset to enjoy on a pretty summer night. So no worries if you don’t have the campfire atmosphere, and of course, they’ll taste just as delicious.
The best part about vegan banana boats is you can literally put anything you want inside! I went with chocolate chips (surprising, right?), shredded coconut, peanut butter, and raspberries. Highly recommend the fresh fruit! The raspberries were seriously the perfect tart, juicy contrast to all the richness going on.
I ended up baking mine for about 8 minutes, but like I said, just keep an eye on them and take them out whenever your toppings look sufficiently gooey and tempting! I love love love these as a fun summer treat. Get to it before summer is gone!
