If you know me at all, you know I LOVE bananas (obvi). And if you know me in real life, you probably know I loooove a good cucumber avocado brown rice roll.

After seeing this super cute idea floating around on Pinterest and Insta, I knew that mashing up two of my most favorite foods could only end in scrumptious snack heaven.

I’m happy to say that assumption was correct, friends. Let’s make vegan banana sushi!

  • Banana: make sure it’s ripe for optimal sweetness and flavor.
  • Drizzles: think vegan yogurt, nut butter date syrup, or if you’re feeling fancy, melted chocolate. These add extra flavor and help the other toppings stick.
  • Sprinkles: anything to add extra texture is great – nuts, shredded coconut, or vegan chocolate chips are all great.

  • Slice the banana into a thickness and place on the plate.
  • Drizzle with your ingredients of choice – I love vegan yogurt and date syrup, or melted chocolate for a more dessert-like treat
