You guys loved these peanut butter energy bites, and I can’t say I blame you! No bake, made with just 3 ingredients, and they’re soft, sweet, and perfectly poppable. After those exploded on pinterest, I knew I had to make a new, fun flavor variation.

Can I be real with you guys for a second? Of course I can, you guys are the best. Almond butter is WAY better than peanut butter.

Cue gasps.

Before you spit out your coffee/tea/water out in disgust and ruin whatever device you’re reading on, let me explain. I LOVE peanut butter. Salty, creamy, basically a staple food in any American child’s favorite sandwich. Peanut butter is bomb, there’s no denying. But I just love almond butter so much more! The flavor is deeper, it’s slightly sweet, and I just can’t get enough. It’s one of very few foods that I have almost no self-control around and have to ration it very carefully, otherwise I’d have an empty jar in less than a day.

Because I have a never ending love for AB, I wanted to create some no bake energy bites with my favorite nut butter as the star, and because I am myself, I threw in some cocoa powder to make it chocolatey, too. Because just like peanut butter, adding chocolate to almond butter only makes it about fifteen million times better.

Ingredients for vegan no bake chocolate almond butter energy bites

  • Rolled oats: oats give the energy bites a chewy texture and help hold them together, while also providing some healthy whole grains.
  • Cocoa powder: cocoa gives the energy bites rich chocolate flavor.
  • Almond butter: almond butter provides richness and healthy fats, but make sure to get unsweetened and oil-free! A lot of nut butters are full of junk you don’t need, so make sure the only ingredients are almonds and maybe a bit of salt.
  • Medjool dates: dates not only provide natural, fruit sweetness, but their sticky texture helps hold the energy bites together.

Tips for making vegan no bake chocolate almond butter energy bites

  • Make sure to blend the oats first. Everything will eventually go into the food processor, but it’s important to start with the oats to make sure they get totally blended and you don’t have any whole oats in the final energy bites.
  • Use your hands to test the texture after blending. This recipe is pretty flexible, and depending on the dates and almond butter you use, you may need to adjust the other ingredients slightly to get the right texture. If they seem too crumbly to roll into balls, add a few more dates, if they seem too wet, add more oats.

The chocolate and almond butter is always a winning combination, and adding in the slightly sweet and nutty oats, and rich, caramel-like dates takes everything to another level. Make these for meal prep on the weekend and have a sweet snack or breakfast treat ready to go for the week!

Vegan No Bake Chocolate Almond Butter Energy Bites

Ingredients
  

  • 1 cup rolled oats
  • 2 tbsp cocoa powder
  • 3/4 cup oil-free unsweetened almond butter
  • 10 medjool dates

Instructions
 

  • In a food processor, combine all the ingredients and process until totally mixed, about 5 minutes.
  • Depending on how moist the dates are and the type of almond butter you use, the mixture may still seem too dry and crumbly to roll. If so, add some more almond butter and blend again. If it seems too wet, add more oats.
  • Scoop out the mixture and roll into energy bites, whatever size you prefer. This amount made about 10 for how I rolled them, I used a little over 1 tbsp for each bite.
  • Store in the refrigerator.
