I sure hope you guys can handle one last cookie-inspired treat before Christmas, cause these vegan no bake sugar cookie energy bites are sweet, soft, and a little too easy to throw together.

Plus, they’ll remind you of sugar cookies!!

I’ve got a lot of recipes for no bake energy bites already, including cinnamon bun, banana bread, chocolate almond butter, peanut butter, and protein cookie dough. But with all the cookie goodness going on for Christmas, I had the impulse to make some sugar cookie inspired energy bites, and I’m so happy I went with it.

Ingredients for vegan no bake sugar cookie energy bites

  • Rolled oats: oats give the energy bites a chewy texture and help hold them together, while also providing some healthy whole grains.
  • Cashew butter: cashew butter provides richness and healthy fats, but make sure to get unsweetened and oil-free! A lot of nut butters are full of junk you don’t need, so make sure the only ingredients are cashews and maybe a bit of salt.
  • Medjool dates: dates not only provide natural, fruit sweetness, but their sticky texture helps hold the energy bites together.
  • Vanilla + almond extract: this combo gives the energy bites their classic sugar cookie flavor.

Tips for making vegan no bake sugar cookie energy bites

  • Make sure to blend the oats first. Everything will eventually go into the food processor, but it’s important to start with the oats to make sure they get totally blended and you don’t have any whole oats in the final energy bites.
  • Use your hands to test the texture after blending. This recipe is pretty flexible, and depending on the peanut butter you use, you may need to adjust the other ingredients slightly to get the right texture. If they seem too crumbly to roll into balls, add a few more dates, if they seem too wet, add more oats.

Vegan No Bake Sugar Cookie Energy Bites

Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup oil-free, unsweetened cashew butter – you could use a different nut or seed butter, but it would definitely affect the taste
  • 10 medjool dates
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract – this is incredibly strong, so I recommend using less if you're sensitive to it, but definitely not more than this amount!

Instructions
 

  • In a food processor, combine all the ingredients and process until totally mixed, about 5 minutes.
  • Depending on how moist the dates are and the type of cashew butter you use, the mixture may still seem a little too dry and crumbly to roll. If so, add a little more cashew butter and blend again.
  • Scoop out the mixture and roll into energy bites, whatever size you prefer! I rolled this amount into 10 bites.
  • Store in the refrigerator.
