Let’s chat about how this vegan nut free strawberry chocolate chip granola came to life. A couple months ago I had the lovely experience of discovering buckwheat groats in all their crunchy glory, and since then I’ve fallen in love with using them to make nut free granolas. Nothing against nuts, their nutritional powerhouses, but I know myself and if I’m eating granola, I’m going to eat more than a handful. I love my classic recipe and this decadent chocolate version, both made with just 3-4 healthy ingredients, because they aren’t super high in calories or fat, so I can have a bit larger of a portion.

Trust me, you’ll want a larger portion, too. It’s so addictive! I love trying new flavors of that original 3 ingredient nut free granola recipe, and now that it’s finally feeling like spring, I wanted to throw in some berries, and of course a little chocolate never hurts. Ta da! Vegan nut free strawberry chocolate chip granola. It’s crunchy, sweet, and just altogether perfect.

Ingredients for vegan nut free strawberry chocolate chip granola

  • Rolled oats: I use old fashioned, rolled oats for the best texture and healthy whole grains.
  • Buckwheat groats: buckwheat can be tricky to find at the grocery store, but I love this brand. It’s super nutrient-dense and SO crunchy.
  • Date syrup: date syrup helps the granola stick together into great clusters, and sweetens it naturally.
  • Freeze dried strawberries: freeze dried strawberries add awesome texture and sweet strawberry flavor.
  • Vegan chocolate chips: I like PASCHA unsweetened chips or Lily’s stevia-sweetened chips, but use whatever vegan chocolate chips you like.

Tips for making vegan nut free strawberry chocolate chip granola

  • Let the granola sit out after baking. After baking, let the granola sit out for a couple hours at room temperature. This is when it gets super crunchy!
  • Mix in the chocolate chips and freeze dried strawberries once the granola is totally cool. After it has sat out for a few hours, mix in the chocolate chips and freeze dried strawberries. Doing this when it’s too warm will melt the chocolate and potentially make the strawberries soggy, which you don’t want!

If you’re at all a granola/cereal lover, you need this vegan nut free strawberry chocolate chip granola in your life. The base granola itself is so addictive, but when you add chocolate chips and strawberries it takes everything to another level of wonderful.

Vegan Strawberry Chocolate Chip Granola

Vegan Nut Free Strawberry Chocolate Chip Granola

Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes
Servings 6 servings, about 3 cups of granola

Ingredients
  

  • 2 cups rolled oats
  • 1 cup buckwheat groats
  • 1/2 cup date syrup – I used the Date Lady brand
  • Freeze dried strawberries + vegan chocolate chips to mix in after baking

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a large bowl, mix the oats and buckwheat.
  • Add the date syrup and stir until the oat/buckwheat mixture is evenly coated with the date syrup.
  • Line a baking sheet with a nonstick mat or parchment paper and pour the granola onto the sheet, then bake for 20 minutes.
  • Allow the granola to cool for 1-2 hours on the counter – this is when it will get crunchy.
  • Break the granola into chunks and mix in the freeze dried strawberries and chocolate chips.

  1. I’ve had buckwheat groats slowly developing a negative outlook on life in the back of my pantry for months now.Poor things.I think they’re gonna be pleased to finally get used! I had no idea you could use them this way.Totally amazing!PS I’ve made about 4 batches of those poptarts in two days.Changed my life!The best thing about low fat goodies is that you can just eat a truck load and never feel guilty or suffer a stomach ache at the end lol.I can’t wait until your next recipe!   2. that looks awesome! I have never had buckwheat groats before so perhaps your posting this is a sign i should try them. But where do i find them? also you mentioned this was less calories than some other granola. would you know what the calorie/nutrition profile looked like? thanks.

    1. Hi, Jacquie! I order my buckwheat groats online, they’re really easy to find on Amazon or just by googling. The entire batch with the ingredients I used is around 1600 calories, and it makes about 3 cups of granola, so around 6 servings. Hope that helps!
