This year mine has definitely been watermelon. If you’ve watched any of my what I eat in a day videos, this won’t come as a surprise. I’ve been eating it almost every day! Which is still weird for me, because literally until this year I thought I didn’t like watermelon at all. Texture was always a bit too styrofoam-y, but I discovered the real problem was that I had never had a sweet watermelon.
Well, I finally had a good one and I’ve been hooked ever since! SO refreshing and perfect for this time of year. With my new found love for watermelon I decided to make vegan watermelon lemonade, and it’s basically summer in a glass.
We’re keeping the ingredients and methods super simple here, per usual! All you need is some chopped watermelon, lemon juice, stevia, and a base liquid of your choice. You can just use tap water, or watermelon water if you can find it. All my store had was coconut water that was flavored with real watermelon, so I went with that!
I can’t wait to make this vegan watermelon lemonade again for fun little summer gatherings! Not going to lie, I love it even more for it’s pretty neon color. Super easy, but seriously so sweet and perfect. It’ll keep you cool on the hottest summa days!
