My school year teaching is officially done, so I’m in full-fledged summer mode. Which means my mind is on all things beachy and tropical, and of course, this carries over to food, cause with this job I think about food quite bit. 🙂

As a result, this vegan nut free tropical granola was born, and summer lovers (and food lovers) everywhere rejoiced.

Now that I think of it, wouldn’t granola be the perfect recipe to pack as a beach snack?! I need to remember that next time I go to the beach…

Ever since I made this classic nut free granola, I’ve been obsessed with creating new, fun flavor variations (like double chocolate and strawberry chocolate chip!). Per usual, I feel like I just need to say that nuts in granola are NOT unhealthy in any way. They’re just quite calorie dense, and I find that when I eat too much fat, even if it is healthy fat, I feel a little…meh. Plus, homemade is always the way to go, cause all too often store-bought granolas are absolutely loaded with added sweeteners, oils, and other weird, unnecessary things. No thanks.

SO! I love making this low fat version with just a few main ingredients – whole oats, buckwheat groats, and some date syrup to bring things together. Simple, perfect, delicious.

I made this vegan nut free tropical granola a bit more summery with the addition of coconut into the base, which gets baked. I was worried the coconut might burn, but mine ended up being just fine for the quick 20 minutes!

Once it’s ready, I just leave my sheet pan on the counter to cool for at least 2 hours, ideally even a bit longer. This is when the granola develops it’s crunchiness, which is so important for good granola. So, patient pants on here, people! Trust me, it’s worth it.

After it’s nice and crunchy, break it into chunks and mix in some freeze dried fruit for another fun texture! To keep things tropical I went with pineapple, banana, and mango. I think some more fresh shredded coconut would be great, too, and some raisins, if you’re into those little boogers.

Vegan Nut Free Tropical Granola

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Yield: 6 servings, about 3 cups of granola

Ingredients

  • 2 c whole grain gluten free rolled oats
  • 1 c buckwheat groats
  • 1/2 c unsweetened shredded coconut
  • 1/2 c date syrup - I use The Date Lady brand
  • Add ins after baking: freeze dried mango and banana, raisins

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, mix the oats, buckwheat, and coconut.
  3. Add the date syrup and stir until the oat/buckwheat mixture is evenly coated with the date syrup.
  4. Line a baking sheet with a nonstick mat or parchment paper and pour the granola onto the sheet, then bake for 20 minutes.
  5. Allow the granola to cool for 1-2 hours on the counter - this is when it will get crunchy!
  6. Add in freeze dried tropical fruits and raisins as desired.
