As a child, ice cream wasn’t my favorite when it came to sweets. I was much more of a cake girl (still am), but don’t get me wrong, I definitely wasn’t turning down a bowl of ice cream.

My favorite flavors always had some form of chocolate, and the best ice cream ALWAYS has some chunks or pieces of something in it, preferably GIANT chunks or pieces. If you disagree, you’re wrong. Kidding! Kinda. Anyway, I remember loving cookies and cream for those reasons. The sweet, rich base, and alllllllll the chocolate cookie chunks was just ice cream heaven. I remember my dad loving it, too, which probably makes me even more nostalgic for it!

Since my dad recently had a birthday and I’ve been thinking of treats that remind me of him (had to go with banana pudding first, that’s his #1!), I knew I had to do some vegan cookies and cream nice cream. All the rich creaminess and chewy, chocolatey cookie chunks, minus the cruelty and disgusting-ness of dairy.

Ingredients for vegan cookies and cream nice cream

  • Frozen banana: banana gives the nice cream sweetness and super rich and creamy texture.
  • Vanilla extract: vanilla gives the nice cream flavor that goes great with the cookie bites on top.
  • Nondairy milk: milk (or water) helps blend the nice cream together.
  • Rolled oats: oats are the base of the cookie bites and give great chewy texture.
  • Medjool dates: dates give the cookie bites natural sweetness.
  • Cacao powder: cacao gives the cookie bites rich chocolate flavor.

Tips for making vegan cookies and cream nice cream

  • Freeze your bananas when they’re super ripe. Always wait to freeze bananas until they’re super ripe and spotty. This is when they have the most sweetness and banana flavor.
  • Add as little liquid as possible. I start with just 1/4 cup of water, then add little by little just to help the blender get things going. The less liquid you add, the thicker and more ice cream-like it will be.

This vegan cookies and cream nice cream is perfectly creamy, sweet, and full of chewy, chunky cookie bites. Nothing brings me more joy than recreating something I absolutely loved as a kid. It took me straight back to childhood, and I hope you love it as much as we did!

Vegan Cookies and Cream Nice Cream

Servings 2 servings

Ingredients
  

Nice cream

  • 2 frozen bananas
  • 1 tsp vanilla extract
  • 1/4-1/2 cup water or nondairy milk

Cookie bites

  • 1/2 cup rolled oats
  • 8 medjool dates
  • 2 tbsp cacao powder

Instructions
 

  • In a high speed blender, blend the frozen bananas, vanilla, and water or milk until thick and creamy.
  • To make the cookie bites, combine the oats, dates, and cacao powder until they form a thick, sticky dough. Roll into the size of your choice, and swirl cookie bites into the nice cream.
  • This nice cream is best enjoyed as soon as you blend it.
